What to Expect

This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve!

We are drooling over our menu for the week.  Starting off the week with our hands-down favorite meal straight from Mom.  The flavors in Oven Baked Pork Ribs are tangy and delicious.  We recommend serving the ribs over white rice to soak up all the extra sauce, or do as Grandpa used to and soak it up with a piece of bread and butter.

You may find something new that you’ve never made with our Collard Greens and Bean Soup.  This recipe is simple and is a remake of “Swamp Soup” from a local joint in Gulf Shores, Alabama.  The leftovers are a great way to keep your waist-line in check during the work week.

A great tip for weekday lunches this week is to make extra grilled chicken, and serve it with our Luscious Lettuce Cups.  Each salad is made in a mason jar. Seal the tight and the salad ingredients will stay fresh until you are ready to eat.

Be sure not to miss our bonus recipe at the end of the post! Pumpkin Crunch is trending high in our recipe lineup.  It’s the perfect taste of fall.

Weekly Meal Plan, Week 24

Saturday: Mom’s Oven Baked Pork Ribs and Crock Pot Calico Beans

Mom's Oven Baked Pork Rib follows a parboil and bake technique that results in a quick, tender barbecued pork rib.  I recommend serving over rice to absorb the finger-licking good sauce.

Sunday Brunch: Amaretto French Toast, Zucchini Quiche

This Amaretto French Toast is a perfect breakfast or brunch for two. The splash of Amaretto in the batter kicks this French Toast up to another level.

Monday: Easiest Grilled Chicken Ever and 4 Ingredient Cabbage Casserole.

This 4 Ingredient Cabbage Casserole is simple to make featuring cabbage, cream of celery soup, Velveeta and butter crackers.  The creaminess of the casserole complements the buttery crunchy of the topping for a crowd-pleasing side dish that can be served any time of year.

Make some leftover chicken for Luscious Lettuce Cups, perfect for a weekday lunch.

Meal prep for weekday lunches just got easier with this Luscious Lettuce Salad in a Jar. The ingredients in this salad can be switched out for your favorites - or what you have on hand.

Tuesday: Crock Pot Taco Soup

This Easy Crock Pot Taco Soup using ground beef is sure to become a go-to meal the entire family will eat and you won't mind them asking for it often because it's simple to throw together.

Wednesday: Collard Greens and Bean Soup

Collard Greens and Bean Soup is a new spin on those classic southern collard greens.  The addition of kielbasa, black beans and Great Northern beans make this healthy vegetable into a full meal.

This would taste great served along side Grilled Naan from Beyer Beware.

Thursday: Crock Pot French Dip and French Onion Rice Casserole

French Onion Rice Casserole combines easy pantry staples such as instant dry rice, beef broth, French onion soup and butter to make a flavorful side dish.

Friday: Crock Pot Brats and Ranch Cauliflower Salad

Topped with bacon and cheese and flavored with a ranch dressing mix, this Ranch Cauliflower Salad is a great side dish any night of the week.

You survived the week! Treat yourself with Pumpkin Crunch.

With a crisp topping and a dollop of whipped cream, this Pumpkin Crunch - made with a cake mix - is a perfect dessert for a crowd.
