The zucchini keeps coming so tonight we cut it in half and scooped out the seeds. Then we filled it with a can of chicken, bacon crumbles, some Alfredo sauce. Topped it with cheese and cooked it covered for about 30 minutes at 400 degrees F then for another 5 minutes uncovered. Left it under the broiler at the end to brown the cheese. It was an easy meal using what we had on hand. #garden #zucchini ...

When it is #asparagus season, you have to get creative. We modified our favorite Spanish Chicken and Rice recipe by using a can of diced tomatoes with oregano and basil instead of regular diced tomatoes, added asparagus instead of peppers. Delicious! https://www.theseoldcookbooks.com/spanish-chicken-and-rice/ ...
