Taco Dip Recipe with Meat and Beans
This is Aunt Peggy’s taco dip with refried beans that she brings to all our family gatherings. I made this as a main course the other day (hey – it was football Sunday, so logically it made sense). My daughter was practically licking her plate.
This is a good option for a party or pitch-in because it holds heat really well. Bake it at home, put in an insulated carrier and out the door you go. Plus, you can make the entire dip ahead of time (minus baking). Cover, and store in the fridge. Right before serving, put it in the oven. It might take a few extra minutes to heat through when you are heating from cold.
This recipe is easily doubled to use an entire can of re-fried beans, container or sour cream and a 16 oz jar of Ortega. We use an extra pound of ground beef too when we double, but you don’t have to. Instead of an 8 x 8 inch or 2 quart pan, use a 13 x 9 inch baking dish.
Taco Dip with Refried Beans
On Christmas last year, we decided to snack on appetizers all day, so Megan made a double batch of this dip and used two dishes so that we could heat up a second batch later in the day. It worked out perfectly! Prep it all at once to save time (and dishes)!
It can be a bit tricky to spread the sour cream over the meat and bean mixture, so do yourself a favor and get a flat edged spatula which is also used to spread icing! On a side note, I freeze the rest of the can of beans and use it later in another recipe.
