We love, love, love this version of sausage queso dip in the crock pot. And our family loves it too. It’s actually a unique version because it has cream cheese along with Velveeta.
Crock Pot Queso with Cream Cheese
Queso with cream cheese has a creamy texture, plus it has double the cheese. More is always better when it comes to cheese. If you have a little more Velveeta or a little more cream cheese that needs used up, go ahead and toss it into the crock pot. This recipe is flexible.
This particular Velveeta Queso recipe is a small batch version, perfect for when you just need enough for one family. We use a small crock pot for these nights.
The good thing is that this recipe is also easily doubled for those days you do want to feed a crowd.

Pork Sausage, cooked, crumbled and drained
Canned Diced Tomatoes with Green Chilies (Rotel)
How to Velveeta Queso in the Slow Cooker:

- In a large skillet, brown up pork sausage. Drain excess grease. Put into Crock Pot insert.
- Cube up Velveeta; add to crock pot.
- Add cream cheese.
- Pour in Rotel (undrained).
- Cook on low until ready.
To make a large batch of this dip, use one pound of sausage, one pound of Velveeta, an 8 ounce brick of cream cheese and 2 cans of Rotel.
Notes About Slow Cooker Queso Sausage Dip:
- Be sure to cook and drain the pork sausage before adding it to the rest of the ingredients.
- Substitute browned ground beef for pork sausage, if desired.
- For a spicier queso use hot pork sausage or spicy Rotel.
- We like to use a mini crock pot for this queso dip. It’s perfect for smaller portions of dips like this recipe.
- Cut the half pound of Velveeta into large chunks before adding it to the crock pot.
- Dump in the cream cheese and can of Rotel tomatoes and green chiles; there’s no need to drain off any of the liquid.
- Every crock pot is different so keep an eye on the dip but it should be ready to serve after an hour and a half to two hours.

- 1/2 lb. Velveeta cheese cubed
- 4 oz. cream cheese
- 1/2 lb. pork sausage cooked and drained
- 1 10 oz. can Rotel tomatoes and green chiles
Instructions
- Spray the insert of your crock pot or use a slow cooker liner.
- Cook pork sausage; drain excess grease.
- Add all ingredients to crock pot insert.
- Cover and cook on high for 1 1/2 to 2 hours, stirring well before serving.
- Serve with tortilla chips.
