Mexicorn Crack Dip is a Texas Cowboy inspired corn dip.  It has all the flavors of Texas with diced tomatoes and chilies and a mexicorn blend.

What is Mexicorn?

It’s a canned corn item that has diced red and green peppers.

Is Mexicorn gluten free?

Yes!

Now that we have those questions out of the way, let me tell you why I love this this cowboy corn dip.

  • It’s an easy corn dip with only six ingredients.
  • This fiesta corn dip only dirties one bowl. Less dishes to clean makes me happy.
  • It’s a multi-purpose dip; I serve it first with tortilla chips, and if there’s any leftovers, I put a little dab in my tacos. YUM!
  • And, it’s a party-pleaser. I rank this as one of the best party dip recipes.

How to Make Cowboy Corn Dip (easy corn dip recipe):

  1. Combine Rotel, canned mexi-corn, sour cream, mayonnaise, dry ranch mix and green onions.
  2. Stir until completely incorporated.
  3. Refrigerate before serving for a couple hours, if possible.
  4. Optional: top with sliced green onions.
  5. Serve with tortilla chips or add to your favorite taco.

Notes About Mexicorn Crack Dip:

  • Mexican-style corn is also called Corn with Peppers.
  • Drain both the Diced Tomatoes with Chilies (Rotel) and Mexi-Style corn. Nobody wants a runny dip!
  • This would be a great sauce for any type of taco.  Try serving with my kids’ favorite Beef Barbacoa. 
  • For a lower fat option, use fat free sour cream and mayonnaise.
  • This fiesta corn dip tastes better if you let the flavors marinate together in the refrigerator for a few hours before serving.
  • Serve with tortilla chips for the perfect party appetizer.

Ingredients

  • 15 ounces canned Mexi-corn, drained
  • 10 ounces canned tomatoes with green chilies (Rotel)
  • 1 1/2 Tablespoons dry ranch mix
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 6-8 green onions, chopped
