My rhubarb plant is in season, so I’m not only making old favorite rhubarb recipes such as Rhubarb Crunch  and Strawberry Rhubarb Jam, but also new recipes like this rhubarb nut bread.

I actually mark new rhubarb recipes all year long while I’m patiently (not really) waiting for my rhubarb plant to come to life. I’ve always loved my Grandma’s Rhubarb Pie recipe as a kid, but these day I’ve become somewhat of a rhubarb connoisseur.

This year, I marked Amish Rhubarb Bread in my What’s Cooking, Teach Cook Book.

Amish Rhubarb Bread Recipe

This quick rhubarb bread recipe is special because it has a crumble topping.  That’s the main reason that I knew I had to make this for my family.

I already have a Classic Rhubarb Bread recipe in my recipe box, but this particular rhubarb bread is so much different with it’s streusel topping baked on top of the bread. That crunchy, sweet covering not only makes it a perfect breakfast option but also a delicious dessert.

The original recipe for Amish Rhubarb bread had a streusel topping made of butter and regular white sugar, but I’ve been tweaking it a bit, and I prefer using brown sugar instead. Both work, and both variations are quite tasty.

Rhubarb Bread with Crumble Topping

The texture of Rhubarb Bread with nuts is very moist, while the flavor is perfectly delightful. Not too sweet, yet not tart like rhubarb tends to be right from the plant.

We eat rhubarb nut bread for breakfast or dessert, and it would also make a delightful rhubarb tea bread served along side a cup of coffee or tea (including our Friendship Tea).

It makes two loaves, so if you don’t think you’ll eat this quick bread within a couple days, be sure to share one loaf or wrap it up tightly in plastic wrap (double-layered) and freeze it for later.

How do I store quick bread?

Rhubarb bread, and most other quick breads, should be stored at room temperature in an airtight container. Storing a quick bread in the refrigerator will change the texture since the sugar in the recipe will crystallize in the colder temperature.

More than a few days at room temperature, and the chance of mold increases. If you don’t think you’ll consume the bread in a matter or days, go ahead and wrap twice in plastic wrap, or one layer of plastic wrap and then in a resealable baggie, and store in the freezer.

How long is rhubarb bread good?

Any quick bread should be eaten within a 3 to 4 days. Rhubarb bread, and other breads, are quite moist which means there’s water available to support mold growth quite quickly.

How to Make Rhubarb Bread with Streusel Topping

Step By Step Instructions

  1. In a large bowl, beat brown sugar, vegetable oil and egg together until completely incorporated.
  2. In a separate bowl, stir flour, baking soda and salt.
  3. Mix buttermilk and vanilla in a different medium bowl.
  4. Add dry ingredients and wet ingredients alternately to sugar mixture until completely combined.
  5. Fold in chopped nut and diced rhubarb.
  6. Pour batter into 2 bread pans that have been greased and floured.
  7. Combine brown sugar and softened butter with your fingers or a pastry blender until butter is in pea-sized pieces.
  8. Sprinkle over the top of the loaves.
  9. Bake in a preheated 325 degree F oven until a toothpick comes out clean.
  10. Let cool in pan on wire racks for 10 minutes before inverting carefully to removed rhubarb nut loaves.

  • 1 1/2 cups brown sugar
  • 2/3 cups vegetable oil
  • 1 egg
