I absolutely love cauliflower, so much so that I’d say it is my favorite vegetable.
It’s yummy raw with all that crunchy texture, but my downright favorite way to eat is is roasted or air-fried. Be sure to check out recipes for both those ways to eat it.
Old fashioned recipes with vegetables are a go-to for me too as well, so I was really excited about this cauliflower casserole with sour cream recipe that I found in my What’s Cooking, Teach Cook Book.
Cauliflower Casserole with Sour Cream
I’ll be honest, before adding this creamy cauliflower casserole to my repertoire, I had never boiled cauliflower, most certainly, never boiled it whole.
It was really easy though.
Remove those leaves at the bottom, and then cut out the hard stems. Then place in a deep saucepan, cover with water, and boil while covered with a lid until knife tender but not mushy.
Once you do that, it’s really easy to cut the cauliflower in florets.
If you’re looking for a shortcut, start with a bag of frozen cauliflower florets that have been thawed.
Easy Cauliflower Bake
Once the cauliflower is prepped, all you need is a creamy sauce for this super easy cauliflower bake.
The sauce is even easier with just two ingredients – butter and sour cream. No wonder it’s so rich and creamy.
Melt the butter and the sour cream, in a small saucepan while you’re prepping the cauliflower.
And then, my favorite part of easy cauliflower bake is the crunchy, buttery cracker topping, made with Ritz crackers or generic butter crackers crushed up with melted butter.
So you’ve got the cauliflower, a creamy sauce, plus buttery, crunchy cracker topping. Put the together, and this old fashioned cauliflower casserole is the bomb.

How to Make Creamy Cauliflower Casserole
- Remove outer leaves and thick bottom stem from fresh cauliflower. Boil whole in large pot of water until knife tender. Drain well.
- Meanwhile, melt butter and sour cream in a small saucepan.
- In a separate small skillet, melt butter; add crushed butter crackers and stir until lightly browned.
- Cut drained cauliflower into florets, and place in a greased 9 x 13 inch baking dish.
- Sprinkle buttered cracker crumbs over top. Pour sour cream sauce over the entire casserole.
- Bake approximately 35 minutes or until bubbly and hot.
- Let sit on the counter for 10 minutes to set up before serving, if possible.

- Substitute margarine for butter, if desired. The butter is divided into two steps, one stick for the sauce, and one stick for the cracker crumbs.
- Light sour cream can be used for regular, full-fat sour cream, if desired.
- To make this super easy, start with a bag of frozen, cauliflower florets that have been thawed.
- Bread crumbs, crushed cornflakes or any other casserole topping could be substituted for crushed crackers.

Old Fashioned Cauliflower Casserole - A Cauliflower Casserole with Sour Cream Recipe
Ingredients
- 1 head cauliflower
- 2 sticks butter (divided for recipe)
- 2 cups sour cream
- 1 sleeve crushed butter crackers (approximately 1 cup)
Instructions
- Preheat oven to 350 degrees F. Spray a 13 x 9 inch baking dish with nonstick cooking spray.
- Remove leaves and bottom, tough stem of cauliflower, leaving the rest of the head whole. Cover with water in a deep saucepan, and boil, covered, until knife tender but not mushy.
- Drain well.
- Cut cauliflower into florets.
- Meanwhile, melt 1 stick butter and sour cream in a small saucepan; stir until smooth.
- In a small skillet, melt 1 stick butter, add crushed butter crackers and brown lightly.
- Add cauliflower to prepared baking dish; sprinkle buttered cracker crumbles over top. Pour sour cream sauce slowly over top.
- Bake for approximately 30 to 40 minutes or until hot and bubbly.
- The the casserole sit on the counter for 5 to 10 minutes to set up before serving, if desired.
