Fudgie Scotch Squares
Holy cow, I’ve discovered the best butterscotch bar cookies in an old cookbook called Medley of Foods Cook Book, Compiled by the Edgewood High School Band of Ellettsville, Indiana from the year 1972. With only 5 simple ingredients, this tray bake dessert is so easy to make.
- Semi sweet chocolate chips
- Butterscotch chips
- Graham cracker crumbs
- Sweetened condensed milk
- Chopped walnuts
It’s safe to say that over 50 years later, these Fudgie Scotch Squares (as they are called in the cookbook) have stood the test of time. They are just as tasty today as they were when this cookbook was published.
Chocolate Chip Butterscotch Bars
I made these tasty treats one day after lunch, and the entire pan was gone by dinner. I love the combination of the chocolate chips and butterscotch chips, because the chocolate chips get melty and a little gooey while the butterscotch chips hold their shape and form.
Then, to add icing on the cake, there’s crushed graham crackers and chopped nuts for extra texture. The binding ingredient is sweetened condensed milk which gives the perfect amount of sweetness.
Go ahead and make a double recipe, because these butterscotch cookie bars won’t last long.

Recipe FAQs
- Use sweetened condensed milk, not to be confused with evaporated milk.
- For easy removal from the pan, line the pan with parchment paper. For an easy way to make the parchment paper to not roll around, crunch up the paper into a ball, and then unfold it. It makes it much easier to work with.
- To get graham cracker crumbs, use a food processor and pulse, or place graham crackers in a zip-lock bag, and pound with a meat mallet or rolling pin.
- To easily press down a sticky batter into a baking pan, place your hand in a small zip-lock bag, and spray lightly with nonstick cooking spray. Press gently using the sprayed side.
Recipe Variations
- Use dark chocolate chips or milk chocolate chips instead of semi-sweet chocolate chips.
- Omit the butterscotch morsels and use all chocolate morsels, if needed.
- Use chopped pecans instead of walnuts, or omit nuts completely.
- Add sweetened coconut.
Why don’t butterscotch chips melt?
Butterscotch morsels have different ingredients than chocolate chips, resulting in a higher melting point compared to other types of baking chips. The ingredients used in butterscotch chips, such as sugar and butter, may not fully liquefy at typical baking temperatures, resulting in a more solid state. To help the process, try adding a little oil or shortening to the chips, and be sure to stir regularly.
Can butterscotch chips go bad?
Yes, butterscotch chips can go bad over time. Exposure to moisture, air, or fluctuating temperatures can cause them to spoil. It’s best to store them in a cool, dry place and use them within the recommended shelf life on the bag.
Are butterscotch chips gluten free?
Most butterscotch chips are not gluten-free due to ingredients such as barley malt or other additives that may contain gluten. However, there are gluten-free options available in the market, so it’s important to check the label and look for certified gluten-free products if you have a gluten intolerance.
Where to buy butterscotch chips near me?
Butterscotch chips are sold at most grocery store chains and are usually found in the baking aisle along with the chocolate chips. Or, buy them online at Amazon. We also love these oatmeal butterscotch cookies.
