I am a huge believer in cookies.

Cookies for breakfast (I blame my mother). Cookies for a mid-morning snack. And, yes, cookies for a late-night snack. You see where I’m going here, right?

I love all sorts of cookies but my favorite cookies have to have some type of chocolate, and the more chocolate they have, the higher they are on my list.

That’s why I love these double chocolate chewy cookies. They have cocoa powder and chocolate chunks.

Flourless Chocolate Cookies

I have plenty of tried and true cookie recipes, but I’m always willing to open the recipe book and welcome a new one into the fold. This summer I saw a recipe for “Chocolate Chewies” in the local newspaper that intrigued me.

It was from a local baker and the idea behind all of the recipes featured was gourmet cookies at home. Even though they are “fancy”, these Chocolate Chewies only had 5 ingredients and no flour. I had to try it.

Chocolate Chewy Cookies with Pecans

Since the recipe calls for egg whites and powdered sugar, the end product had a lightness to it that normal cookies don’t seem to have.

Just remember one thing when you are working with powdered sugar…it’s powdery and can made a real mess if you get a bit crazy with the whisk!

The original chocolate chewy cookie recipe called for toasted nuts – like walnuts – but I didn’t have any so I just added extra chocolate chips. I also used Ghiradelli 60 percent Cacao (bittersweet chocolate) chips to punch them up a notch. Totally worth it!

  • Cocoa Powder
  • Egg White
  • Chocolate Chips or Chocolate Pieces (semi-sweet to dark)
  • Chopped Nuts (optional)
  • Egg Whites

How to Make Chocolate Chewies Cookies

  1. Preheat oven.
  2. Combine sugar and cocoa, whisking well to combine.
  3. Add chocolate and nuts(optional), and then add egg whites, and mix until combined.
  4. Scoop ping pong ball-size portions of dough and place on parchment-lined sheet tray.
  5. Bake until the tops begin to show small cracks.

Makes approximately 1 dozen cookies.

Notes About Chocolate Chewies with Nuts

  • Chocolate Chewies have no flour, making it a gluten-free dessert.
  • Semi-sweet chocolate chips work great, but I also sometimes cut up dark chocolate or semi sweet chocolate bars into slivers or chunks.  It’s a great way to use up any leftover baking chocolate you might have on hand.
  • Nuts are optional.  Toasting the nuts could also be omitted; however, it is worth the extra effort.
  • If you love a fudgy chocolate chewy cookie, then go ahead and under bake. Just note, they do not come off the pan easily and also tend to fall apart.  But they are decadently fudgy!
  • Line your pan with parchment before baking.  This will prevent the cookies from getting stuck to the pan.
