Cheesy Taco Dip Recipe

This is one of those dishes that makes its way to almost every game day party spread. Why is that? Because everyone loves it, and there’s rarely any leftovers.

This recipe was adapted from Mex Dip recipe out of Recipes from the Hearts of our Friends and Family at First Baptist Church of Shelbyville, Indiana.

Our family is big on fixing several appetizers – like this Cheesy Taco Dip – to enjoy on holidays. We usually fix them for lunch so we can snack early in the day and wait until dinner to have our big holiday meal.

  1. Brown ground beef with onions and peppers; drain if needed.
  2. Add tomato sauce, taco seasoning, re-fried beans, dry mustard and chili powder; heat until bubbling.
  3. Add to pan. Top with sour cream, and then shredded cheese.
  4. Bake until cheese is melted.

Notes About This Game Day Dip:

  • I have been using my electric skillet to fix dishes like this Easy Cheesy Taco Dip Recipe. It heats up super quick and is really easy to clean.
  • Looking to lighten thing up a bit?  Use fat free sour cream and fat free re-fried beans in this hamburger taco cheese dip.
  • Feel free to substitute any of your favorite shredded cheeses for cheddar.  Anything goes! To make it extra delicious, grate your own cheese instead of buying the pre-shredded version.
  • Another great thing about Easy Taco Cheese Dip is that it is fully cooked before it goes into the oven. Just pop it in to melt all the cheese and it is ready to serve.
  • The sour cream is already in the dip so no extra toppings needed!

Ingredients

  • 1 lb ground beef
  • 1 green pepper finely chopped
  • 1 small onion finely chopped
  • 8 ounces tomato sauce
  • 1 pkg taco seasoning
  • 1 teaspoon dry mustard
  • 16 ounces re-fried beans
  • 1 Tablespoon chili powder
  • 1 pint sour cream
  • 8 oz. pkg shredded cheddar cheese

Instructions

  • Cook ground beef with onions and pepper. Drain grease if needed.
  • Stir in tomato sauce, taco seasoning, dry mustard, re-fried beans, and chili powder.
  • Heat until mixture begins to bubble.
  • Spread into greased 9 by 13 inch casserole dish.
  • Spread sour cream on top. Sprinkle with cheese.
  • Bake at 350 degrees F until cheese melts.
  • Serve with tortilla chips.
