I love how easy this recipe is to throw together on the stove. The hardest part is taking the time to properly cook the beets before hand.
The original author from my cookbook called Vegetables on the Side recommends baking the beets first for the best tasting creamed beet recipe. However, if you’d rather steam or boil them, it would still be tasty.
Baking the beets is quite simple, it just takes some time. Trim the beet stems to around 1 inch; then, lightly spray with nonstick cooking spray, or give them a rub down with some oil (such as olive oil). Bake on a sheet pan (I line mine with aluminum foil) in a preheated 325 degree F oven until tender. For a small beet, this could be around 30 minutes, or for a large beet up to a couple hours. I’m to the point that I literally have veggies in every nook and cranny of my kitchen. I have to take a deep breath, and give myself a pep talk. Don’t get me wrong, I absolutely love this time of year. I love having fresh fruits and veggies, but it is a bit overwhelming.
I love this old fashioned cream beets recipe. It’s something different that my usual Pickled Beets or Beet Salad. It pairs great as a side dish with steak or fried pork chops.
How to Make Creamed Beets?
Step by Step Instructions
- To prepare beets, trim off beet greens leaving around 1 inch of stem intact. Lightly oil with cooking spray, and place beets uncovered on a sheet pan or baking sheet. Cook in a preheated 325 degrees F until tender up to 2 hours for a large beet. Cool the beets, peel off the skin and dice into small pieces.
- In a medium saucepan or skillet, simmer heavy cream over medium heat until reduced by half, around 5 to 7 minutes.
- Melt butter in a separate skillet or saucepan over low heat.
- Cook the onions for approximately one minute, stirring occasionally.
- Stir in the beets and reduced cream.
- Season well with salt and black pepper. Cook until heated through.
- Serve hot.
Storage Instructions
Let the leftovers cool completely. Store in an airtight container in the refrigerator for 3 to 5 days.

What’s the best way to prepare beets?
There’s multiple ways to prepare beets before eating including steaming, microwaving, boiling or baking.
For steamed beets, place the whole beets in a steamer basket; cover an steam for 45 to 90 minutes.
To boil, cover trimmed beets with water and a couple tablespoons of vinegar or lemon juice to prevent bleeding. Simmer over medium heat until tender.
To microwave, place trimmed beets in a microwave safe dish, add approximately a half cup water, and cover and vent with plastic wrap. Microwave approximately 15-20 minutes, turning the beets a couple times in the dish.
For baked beets, trim and lightly oil the beets, place on a sheet pan, and bake in a preheated 325 degree F oven until tender, up to 2 hours.
