A Recipe for Egg Zucchini Fritters
This recipe comes from West Virginia. The addition of egg to these fritters means the texture is moist on the inside while the outside is golden brown and crispy.
In all honesty, these zucchini patties could be served for breakfast, lunch or dinner. My kids are crazy and dip them in ketchup, but a nice sour cream would be tasty.
Or use them as a mild side to go with something spicy.
Ingredient List for Crispy Zucchini Fritters
Zucchini, shredded and moisture removed: You can use zucchini or summer (yellow) squash for these fritters. Just shred with the skin on and use a dish towel to squeeze out the excess moisture from the shredded zucchini/squash. We prefer using a couple of medium-sized zucchini rather than a really large one for this recipe.
Bisquick Mix: Bisquick is an all-in-one baking mix with the primary ingredients of flour, salt, baking powder, and shortening. You can use a generic all-purpose baking mix or Jiffy Baking Mix as a substitute.
Grated Parmesan Cheese: Yes, this is the grated parmesan cheese you find in the 8 oz. green containers at the grocery store! The Parmesan & Romano Cheese variety works as well. You can use the fancier grated parmesan cheese from the deli section or even grate your own.
Eggs, beaten: Lightly beat your eggs before adding them to the mixture. This helps distribute the eggs evenly throughout the fritter mixture.
Vegetable Oil, for frying: Use regular vegetable oil or canola oil for frying.
Salt and Black Pepper: Season as desired.

Why are my zucchini fritters soggy?
The trick to getting a nice crispy zucchini fritter is in the process. Be sure to squeeze all the excess moisture from the shredded zucchini before making the batter. To do this, wrap the shredded zucchini in a clean kitchen towel or a couple layers of paper towel, and then squeeze it until no more moisture runs out. You’ll be surprised how much water will squeeze out.
How do I keep my zucchini fritters from falling apart?
Be sure to use some type of binder in your zucchini fritter batter. My favorite fried zucchini patties recipe uses both beaten eggs and Bisquick mix. The combination of these two binders will hold the zucchini fritters together during frying. The batter shouldn’t be too wet or too dry.
