Ham and Cabbage Casserole is a great way to use up leftover holiday ham. My favorite part is the crunchy, cheesy topping made with shredded cheese and cornflakes.
Scalloped Cabbage and Ham is an old fashioned recipe that will become a go-to leftover ham recipe.
What is scalloped cabbage? Think of scalloped potatoes and swap out the potatoes for cabbage. It’s basically cabbage in a creamy sauce, often featuring cheese. Scalloped Cabbage and Ham turns a great side dish into a hearty main dish.
Favorite Ways to Cook a Ham
Ham is a great protein that can be used in so many different ways once you’ve enjoyed it sliced during the holidays – or on a regular Tuesday! Cubing leftover ham to use in casseroles, soups and other dishes can save time and energy on busy weeknights. We cut up leftover ham and freeze pre-measured portions that can be pulled out and used to get dinner on the table quickly.
Ham is a favorite on holidays, like Christmas and Easter. We often make a ham for Thanksgiving to go along with our favorite crock pot turkey breast. Using the slow cooker or Instant Pot to fix our holiday ham lets us use our oven for more side dishes and desserts.

Scalloped Cabbage and Ham
While I do have a great number of favorite leftover ham recipes in my arsenal, I am always looking for new ones.
That’s how this scalloped cabbage and ham casserole came about. I’ve been making a cheesy cabbage casserole as a side dish for years, but it occurred to me how delicious it would be with the addition of cubed ham.
A combination of melted butter and crushed cornflakes gets layered on the bottom as a crust. The topping combines crushed cornflakes and shredded cheesy. The center consists of the scalloped cabbage and bits of ham in a creamy white sauce.
Ingredient List for Cabbage Casserole with Ham
- Green Cabbage – Cabbage can be used in so many different ways. In this casserole, it should be shredded thickly. You can use a food processor or a knife and cutting board.
- Ham – Use cooked ham that is either cubed or diced. Leftover ham works great in this dish but you can also use deli ham or the cubed ham found in the grocery coolers near the smoked sausage and pre-packaged lunch meats. You could also use Canadian bacon.
- Cornflakes cereal – Use whatever brand of corn flakes cereal you want. The cereal should be crushed. Simply use a plastic bag and a rolling pin to crush the cornflakes into a coarse texture.
- Butter – We suggest using butter – unsalted preferably but salted works too; however, margarine can be used as a substitute for butter.
- Cream of Celery Soup – Condensed cream of celery soup is what we normally use in this casserole, but you can substitute cream of chicken or cream of mushroom if that is what you prefer or have on hand.
- Milk – We use whole or 2 percent milk but you can use whatever type of milk you have on hand. Evaporated milk – NOT sweetened condensed milk – could even be used in a pinch.
- Mayonnaise – Do not use Miracle Whip. Be sure to use Mayonnaise in this dish.
- Shredded Cheddar Cheese – While cheddar cheese is preferred, use any type of cheese you prefer. While shredding your own cheese from a block will result in a better melt, we use pre-shredded cheese all the time!
How to Make Leftover Ham and Cabbage
- Preheat oven to 350 degrees F.
- Place a stick of butter into a 9 x 13 inch baking dish; place in the oven while preheating, watching closely until it melts.
- Remove from oven and sprinkle with 1 1/2 cups crushed cornflakes.
- Layer shredded cabbage and diced ham over the cornflake layer. It will be mounded up but will cook down.
- In a saucepan, warm up and mix together cream of celery soup, milk and mayo until warm and smooth.
- Pour over cabbage and ham mixture.
- Top with remaining 1/2 cup crushed cornflakes and shredded cheese.
- Bake for 45 minutes. Let rest before serving.
Storage Instructions
Let leftovers cool completely. Store in an airtight container in the refrigerator for up to a week.

Ingredients
- 2 cups crushed cornflakes, divided
- 1/2 cup butter
- 4 – 6 cups green cabbage, shredded thickly
- 2 cans cream of celery soup (10.5 ounce cans)
- 1/4 cup mayonnaise
- 1 cup milk
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees F. Place a stick of butter in a 13 x 9 inch baking dish and place in the oven until just melted.
- Pour 1 1/2 cups crushed cornflakes over the melted butter.
- Layer shredded cabbage and diced ham over the cornflakes.
- In a saucepan, mix cream of celery soup, milk and mayonnaise and heat until warm and smooth.
- Pour over cabbage.
- Sprinkle the top with remaining 1/2 cup cornflakes and shredded cheese.
- Bake for 45 minutes.
- Let rest 15 minutes before serving.
