This recipe is basically a zucchini casserole with Bisquick baking mix and Parmesan Cheese. The dish comes together easily, makes enough to serve a crowd, and is a favorite recipe of most who try it.

I noticed that two women submitted the exact same recipe called zucchini appetizers in my North Carolina State Elks Association Cook Book, and we always have too many zucchini in the middle of garden season. So I grabbed a couple and got a pan of Parmesan Zucchini Squares baking in the oven.

The aroma that comes from the oven while these are baking is heavenly. It comes from the combination of dried oregano and parsley, and also the  garlic powder and minced fresh garlic.

The herbs, garlic and Parmesan cheese bring the flavor while the zucchini creates a nice texture. I love it, and it’s safe to say that it will be a regular on our summer menu.

Zucchini Casserole with Bisquick and Parmesan Cheese

This quick Bisquick Zucchini bread goes alongside any meal as a side, or they make a great baked zucchini appetizer. The recipe makes a large 13 x 9 inch pan which makes a great party option.

If you’ve never used a baking mix like Bisquick, then I recommend getting a box to keep on hand. You can make a quick biscuit or pancake, or it makes a great base for breads like this Parmesan Herb Zucchini bread.

For the Parmesan Cheese in these Parmesan Zucchini Squares, just go ahead and use the cheap parmesan cheese in the green jar. You know the one. Your kids probably sprinkle it on top of spaghetti.

How to Make Baked Zucchini Appetizers

Step By Step Instructions

  1. Beat eggs in a large bowl.
  2. Add Bisquick, chopped onions, salt, grated Parmesan cheese, garlic powder, oregano, black pepper, garlic, oil and parsley and mix until incorporated.
  3. Stir in thinly sliced zucchini to the bisquick mixture.
  4. Pour into a 13 x 9 inch baking dish that has been sprayed with nonstick cooking spray.
  5. Bake in a preheated 350 degree F oven for 35 to 40 minutes or until golden brown.
  6. Cut into squares and serve hot, cold or room temperature. Try slathering with butter!
