This recipe came from The Working Cook, one of my go-to old school cookbooks. I modified our Classic Zucchini Bread recipe by adding some yummy ingredients to make this caramel version. You can jazz up zucchini bread with chocolate chips (our favorite), glazes (try our mocha glazed version), nuts and raisins, and so much more.
Recently, I found a bag of Ghiradelli Caramel baking chips and a half-eaten box of Stroopwafels from Big Lots while cleaning out the pantry. What is a Stroopwafel? It is a double layered waffle cookie filled with caramel originally from the Netherlands. My brain started working, and next thing you know I created a new favorite version of zucchini bread.
I love how you get a double-punch of caramel flavor in this zucchini quick bread. It is a great combination with a cup of coffee for breakfast or for dessert after a summer dinner like Grilled Pork Steak.

I love zucchini bread recipes that make 2 loaves of bread. Here’s how I play these cards.
We eat one loaf of this moist zucchini bread right away, and then there’s an extra to do one of two things with.
- Share a loaf of zucchini bread with caramel with friends or family, or possibly someone who just had a baby, a death, or who might be just have a rough time.
- Wrap up the moist zucchini bread in foil and then seal tightly in an air-tight zip lock back, and toss it in the freezer for later.

How to Make Make Caramel Zucchini Bread with Stroopwafel Cookies:

Instructions:
- Combine wet ingredients in a mixer—grated zucchini, eggs, sugar, oil, applesauce and cinnamon.
- In a separate bowl, mix the dry ingredients–flour, baking powder, baking soda, and salt.
- Slowly add the dry ingredients to the wet ingredient, mixing lightly between each addition.
- Stir in caramel chips and chunks of Stroopwafel cookies.
- Divide into 2 loaf pans that have been greased and floured. If desired, add more caramel chips on top.
- Bake at 325 degrees F for an hour.

- Stroopwafel cookies are a secret ingredient; however, they are optional. You could just use caramel baking chips, if desired.
- What is a Stroopwafel? It is a waffle cookie from the Netherlands that is filled with caramel sauce. If you can’t find these in the store, try online here. I typically find them at Big Lots.
- Be sure to grease and flour the loaf pans; this prevents the caramel chips from sticking to the bottom of the pan.

Caramel Zucchini Bread with Stroopwafels - A 2 Loaf Zucchini Bread Recipe
Ingredients
- 2 cups zucchini, grated
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 1/2 cup applesauce
- 1 Tablespoon cinnamon
- 3 cups flour
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 - 2 cups caramel baking chips
- 3/4 cup Stroopwafel cookies, chopped (optional)
Instructions
- Preheat oven to 325 degrees F. Prepare 2 loaf pans (9 x 5 inches) by greasing and flouring all sides. This is important!
- On medium speed, mix zucchini, eggs, sugar, oil, applesauce and cinnamon.
- In a separate bowl, mix flour, baking powder, soda and salt; add slowly to the wet ingredients until just mixed between each addition.
- Reserve 1/4 cup caramel chips for top. Coat the remaining chips in 1 tablespoon flour. Stir in caramel chips and chopped Stroopwafels (optional).
- Divide the batter into the prepared loaf pans.
- Sprinkle top with reserved caramel chips.
- Bake for 1 hour or until toothpick comes out clean.
- Let cool for 5-10 minutes before removing from pan.
