How to roast any vegetable?

Follow these easy steps when roasting your favorite vegetable including carrots, zucchini. asparagus, squash, potatoes, peppers, green beans and more!

  1. Preheat oven to 425 degrees F, which is the perfect roasting temperature.
  2. Start with more veggies than you think you need. The water evaporates and the veggies shrink.
  3. Use a healthy amount of olive oil (or coconut or avocado oil).
  4. Sprinkle generously with Sea salt (or Pink Himalayan) and black pepper.
  5. Roast until veggies are partially golden brown (the color of caramelization and sweetness).

How to Roast Yellow Squash

Step by Step Instructions

  1. Preheat oven to 425 degrees F.
  2. Slice yellow squash into 1/4 inch slices.
  3. Arrange on a large roast pan or large baking sheet.
  4. Drizzle with olive oil; sprinkle with salt, pepper and garlic powder.
  5. Bake for 50 to 60 minutes or until lightly golden brown; stirring often.

Storage Instructions

Let leftovers cool. Transfer to an airtight container, and store in the fridge for 3 to 5 days.
