What do you get when you combine your favorite summer sandwich with a humble summer vegetable? Bacon Cheeseburger Squash Casserole is a great way to use up all those summer squash and convert them into a meal fit for your entire family.
I’ve been on the lookout for a yellow squash recipe with ground beef. I really wanted to make the summer squash casserole the main course, and since I have yet to find one in any of my vintage cook books, I set out to create my own version.

What’s better than a summer squash casserole with ground beef? Let me tell you – a yellow squash casserole with bacon (and ground beef).
I love all the flavors of a bacon cheeseburger – ground beef, cheese, more cheese and bacon. So I modified our most popular yellow squash casserole (AKA Kentucky Southern Squash) and created this delightful squash casserole.
Megan (the other half of these old cookbooks) is the woman behind all these yellow squash. Her garden was on fire in terms of producing summer squash. Every time anyone saw her, she sent home a humongous bag. I think my husband was secretly counting down the days until the squash surplus comes to an end.
I’ve literally used squash in every way I can think of but casseroles are my go-to. Adding ground beef and bacon is my favorite way to take these humble little summer vegetables and make it into a family-friendly meal.

How To Make Yellow Squash Casserole with Ground Beef
Step By Step Instructions
- Boil 1-inch chunks of yellow squash until fork tender; drain well.
- Return to warm pan; add butter and stir until melted.
- Add in remaining ingredients (except bacon), stir well.
- Pour into a greased 13 x 9 inch baking dish; sprinkle with bacon bits.
- Bake in a preheated 350 degree F oven for 30 minutes or until golden brown and bubbly.
Storage Instructions
Let the leftovers cool completely. Store in an airtight container in the fridge for 3 to 5 days.

Bacon Cheeseburger Squash Casserole
Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 4-5 cups yellow squash, cut into 1 inch cubes
- 1/4 cup butter
- 10 3/4 ounces cheddar cheese soup
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 sleeve crushed butter crackers
- 4-5 slices bacon, fried crisp and crumbled
Instructions
- Cook ground beef with diced onion until browned; drained if needed. Season lightly with salt and pepper to taste. Set aside.
- Add cubed summer squash to a skillet or medium saucepan; cover with water and boil until fork tender. Drain well.
- Add the cooked yellow squash back to the warm pan; add butter and allow to melt.
- Add the remaining ingredients except the bacon into a greased 13 x 9 inch baking dish.
- Sprinkle with fried chopped bacon.
- Cook in a preheated 350 degree F oven for 30 minutes or until golden brown and bubbly.
