Simple Sour Cream Cucumbers is an old fashioned summer salad featuring garden cucumbers and onions. The creamy dressing is a delightfully easy sour cream base, flavored with with a pinch of tarragon (or dill).

Simple is better when it comes to summer produce. When in season, fruits and vegetables are at their peak of flavor, and I prefer to enhance these natural flavors instead of masking them.

Sour cream gives a cool and creamy note to this classic salad, and a pinch of tarragon gives a special flavor note. If tarragon isn’t your cup of tea, try swapping in dill weed. I love both!

Step By Step Instructions
- Peel and slice cucumbers and onions thin.
- Mix sour cream, vinegar, water, salt, pepper and dried tarragon.
- Pour the sour cream mixture over the cucumbers and onions.
- Serve immediately or chill for a couple hours in the refrigerator.

There’s several ingredients to add to a cucumber salad to give it a creamy texture. Sour cream, mayonnaise, miracle whip, Greek yogurt (plain, not sweetened), prepared salad dressings such as Ranch or Caesar are all great ingredients for a creamy cucumber salad.
How to fix cucumbers with sour cream?
Slice cucumbers and onions with a knife or mandoline slicer. Whisk together sour cream, vinegar, water, fresh dill, salt and black pepper. Pour over cucumbers. Chill in the fridge before serving.
