Most often, I make Mom’s Cucumbers and Onions. It’s what I grew up eating and will always be my go-to cucumber recipe.  But, I love to switch it up, and this is one way I do it when it comes to cucumbers. I also love these Soy Cucumbers with Sesame Oil.

Sour cream gives a cool and creamy note to this classic salad, and a pinch of tarragon gives a special flavor note. If tarragon isn’t your cup of tea, try swapping in dill weed. I love both!

Grandma’s Creamy Cucumber Salad

I’m sure many Grandmas in the past made this exact creamy cucumber salad during the summer with cucumbers and onions were plentiful.

It’s cool and refreshing, and it goes with almost any summer meal.

I tend to keep meals light during the hot summer months. This means pulling out cold salads like this creamed cucumber and onion salad to serve as a side dish with simple lunch meat sandwiches, burgers or grilled pork steak.

How to Make Creamy Cucumber Salad

Instructions:

  1. Peel and slice cucumbers and onions thin.
  2. Mix sour cream, vinegar, water, salt, pepper and dried tarragon.
  3. Pour the sauce over the cucumbers and onions.
  4. Serve immediately or let marinate for a couple hours in the refrigerator.

How to make cucumber salad creamy?

There’s several ingredients to add to a cucumber salad to give it a creamy texture.  Sour cream, mayonnaise, miracle whip, Greek yogurt (plain, not sweetened), prepared salad dressings such as Ranch or Caesar are all great ingredients for a creamy cucumber salad.

Notes About Simple Sour Cream Cucumbers:

  • I prefer my cucumbers peeled, but feel free to leave the peel on if that’s what you prefer. English cucumbers have a thin skin while regular garden cucumbers are more waxy skinned.
  • Slice both cucumbers and onions thin.
  • White vinegar works great but try changing it up with rice vinegar or white wine vinegar.
  • Dill would be an awesome substitute for tarragon, if desired.
  • Fresh dill would be even tastier in my opinion. Or you could totally omit any additional seasonings other than salt and black pepper.
  • Stir in some diced, seeded tomatoes for a new spin.
