Crock Pot Cheesy Corn Casserole Recipe
We love using sweet corn as an easy side dish because we KNOW the kids in the family (and some of the picky adults) will always eat it. Sweet corn straight from the freezer with some butter, salt and pepper is great, but sometimes we just want to add a bit more flavor to this already great food. This cheesy corn recipe does just that.
This cheesy sweet corn recipe is famous in the family of a co-worker. She is required to make it every Thanksgiving, and she usually doubles or triples it. I asked for the recipe to make for my family on Easter, and it was a hit! It is safe to say that I’ll be making this every holiday too.
Cheesy Corn with Cream Cheese Ingredient List
- Frozen Corn, Whole Kernel Corn Variety (from the store or home-grown)
- Cream Cheese
- American Cheese (or Velveeta)
- Sugar
- Butter
- Milk (or cream or half and half)
- Water
Do You Freeze Your Own Sweet Corn?
We used (and always prefer) the sweet corn that we froze last summer in this recipe, but you can use regular frozen sweet corn you find your grocery’s freezer section. If you use sweet corn that you freeze yourself, it will probably start out in a solid chunk of frozen corn. If this is the case, you might want to turn your slow cooker to high about 3 to 4 hours in and cook it on high for the last hour to ensure the dish gets nice and hot throughout.
Each spring, our family usually plants large patches of sweet corn at the ends of a couple of our fields of field corn which is grown mainly to feed livestock and is NOT eaten off the cob, like the sweet corn featured in this recipe. After enjoying fresh corn on the cob for a few weeks each summer, we then freeze lots and lots of sweet corn to enjoy throughout the year. Our method is pretty simple, blanch the corn in boiling water and then cut it off with a knife. Our friend, Leah over at Beyer Beware has a different way to freeze sweet corn.
Don’t have frozen sweet corn in your freezer? No worries, the corn from the grocery store freezer works. We are big fans from frozen (and canned) vegetables from the store!
How to Make Crock Pot Cheesy Corn
Step By Step Instructions
- Add corn, cream cheese, American cheese, sugar, water and milk to your slow cooker insert.
- Cover and cook on low for 4-6 hours. Stir occasionally. It is ready when it is hot all the way through.
Storage Instructions
Let leftovers cool completely. Transfer to an airtight container, and store in the refrigerator for up to a week.
