Crock Pot Cheesy Corn and Smoked Sausage Pasta Bake

Barbara’s friend shared this family favorite recipe with her recently and claims that there isn’t a holiday where this dish isn’t on the table. The recipe was even a part of her friend’s bridal shower recipe book.

Aren’t those recipe books and recipes just the best? When friends and families share their favorites, you get a collection of recipes that are tried and true from years of use.

The original recipe is more of a side dish but Barbara added her favorite smoked sausage from Rihm Foods and put it all in her 3.5-quart Casserole Crock Pot to make it a one-dish meal.

Ingredients

  • Whole kernel corn, do not drain
  • Creamed style corn
  • Uncooked macaroni
  • Velveeta cheese
  • Smoked sausage, cut into rounds or half moons
  • Margarine or butter

How to Make Slow Cooker Cheesy Smoked Sausage, Corn and Pasta

Step by Step Instructions

  1. Mix together all ingredients except margarine or butter, and add them to the slow cooker insert.
  2. Slice margarine or butter on top of the rest of the ingredients.
  3. Cook until bubbly and stir before serving.
  4. To make this in the oven, follow the steps in the recipe card but mix it in a casserole dish and bake covered (with foil) in a 350-degree F oven for 45 minutes.

Storage Instructions

Let leftovers cool. Transfer to an airtight container, and store in the fridge for 3 to 5 days.

Recipe Variations

  • Use any type of smoked sausage. I often use turkey sausage but polish sausage would be yummy.
  • Add diced bell peppers. If desired, sauté both onions and peppers first before adding to the slow cooker. Minced garlic would also add great flavor.
  • A can of diced tomatoes or stewed tomatoes would be a nice addition.
  • If you love cheese, add shredded cheese. Cheddar cheese, mozzarella cheese, Colby, Parmesan cheese etc. would work.
  • Drain a can of green beans, and stir them into the casserole.
  • No Velveeta cheese melt on hand? Do not fret, try a can of alfredo sauce instead.
  • For heat, add a sprinkle of red pepper flakes.
  • Garnish with fresh herbs such as fresh parsley before serving.

  • 1 15 oz. can whole kernel corn do not drain
