Ingredients

  • 2 cups shredded zucchini (do not peel first)
  • 2 eggs, beaten
  • 1/3 cup dry Bisquick mix
  • 1/4 cup grated Parmesan cheese
  • 3 - 4 Tablespoons vegetable oil for frying

  • Shred zucchini; press out excess moisture using a kitchen towel or paper towel.

  • Jiffy Cornbread Mix could be used instead of Bisquick mix.
  • Dried or fresh herbs would be a lovely addition to the batter. 
  • I used a small cookie scoop to make the perfect sized fritter. 
  • For the frying oil, vegetable, soybean or canola oil works best.
