- 2 cups shredded zucchini (do not peel first)
- 2 eggs, beaten
- 1/3 cup dry Bisquick mix
- 1/4 cup grated Parmesan cheese
- 3 - 4 Tablespoons vegetable oil for frying
Shred zucchini; press out excess moisture using a kitchen towel or paper towel.
Make batter by combing zucchini, beaten eggs, grated Parmesan and Bisquick mix.
Heat a shallow layer of vegetable oil in the bottom of a skillet to medium high heat. Scoop batter into hot oil, pressing down gently to form a patty.
Fry on the first side until golden brown; flip and do the same on the second side.
Drain onto paper towels before serving.
- To prevent soggy zucchini patties, squeeze all the excess moisture out of the zucchini.
- Jiffy Cornbread Mix could be used instead of Bisquick mix.
