Easy Spaghetti Pie with Cottage Cheese
Easy Spaghetti Pie with Cottage Cheese is a mix between traditional spaghetti and lasagna morphed into an oven casserole.
The “pie” crust is formed from spaghetti noodles that are coated in butter, Parmesan cheese and eggs. The lasagna factor comes into play with a layer of cottage cheese (or ricotta). The spaghetti “sauce” is an easy mixture of staple pantries like tomato paste and stewed tomatoes. Layer it up and bake for the ultimate family-pleasing meal.
Spaghetti Pie Recipe
This Spaghetti Pie recipe comes from our favorite Pot O’Gold cookbook. Barbara made it recently for a new mom. It worked perfectly, she assembled, wrapped in aluminum foil, and labeled with the directions. She then put the pie in a large resealable plastic bag and included a little bag of mozzarella cheese. All the mom had to do is bake according to the instructions written on the bag. Even better is the fact that this makes 2 pies, so Barbara had another for her family for dinner.
This is a perfect make-ahead recipe to freeze. You can pull it out for a busy weeknight meal, and dinner is served. To do this, prep it ahead, and wrap tightly with aluminum foil before baking.
To prevent freezer-burn, put the pie in a large resealable plastic bag, and make sure all the air has been removed before sealing. Label properly with a sharpie so you know exactly what the bag contains. Do yourself a favor, and put the cooking instructions on the bag as well.
The end result is a hearty, cheesy casserole that adults and kids alike will love.

How To Make Spaghetti Pie with Ground Beef

Cook spaghetti noodles according to package directions; drain and let cool slightly so you don’t cook the eggs. Once cooled, add butter (or margarine), grated Parmesan cheese and beaten eggs. Spoon this into 2 pie pans that have been sprayed with nonstick cooking spray. This forms the “pie” crust. Spoon cottage cheese (or ricotta) over the spaghetti noodles.
In the meantime, brown ground beef in a skillet with the chopped onions; season well with salt and black pepper to taste. Drain excess grease if needed. Stir in stewed tomatoes (do not drain), tomato paste, sugar, dried oregano and garlic salt. Pour mixture over the cottage cheese layer.
Bake in a preheated 350 degree F oven for 30 minutes. It should be warm and starting to bubble slightly. Sprinkle with shredded mozzarella cheese, and bake for 5 to 10 minutes longer or until the cheese is melted.
Notes about this Spaghetti Pie Recipe
- This baked spaghetti pie recipe makes 2 spaghetti pies. You can easily halve this recipe if only one pie is desired.
- If you only need one pie for dinner, wrap up the second one in aluminum foil, and then put in a large zip lock bag. Freeze for up to a month. To cook, thaw completely in the refrigerator and cook according to recipe instructions.
- You can modify this spaghetti pie with ground beef recipe by adding mushrooms and/or chopped green peppers. Yum!
- This is a spaghetti pie with cottage cheese, but you could use ricotta instead. (Just like lasagna.)
- For our version, we bought a block of mozzarella cheese and grated it on a box shredder. But you could buy the pre-shredded cheese.
- Looking for a leaner pie, try using ground turkey instead of ground beef.
- Do not drain the stewed tomatoes!
- Be sure to properly season the ground beef as it cooks. Salt and black pepper are important.

Ingredients
- 16 oz. spaghetti
- 4 Tablespoons butter (or margarine), melted
- 2/3 cup Parmesan cheese, grated
- 4 eggs, well beaten
- 2 cups cottage cheese (or ricotta)
- 2 lbs ground beef
- 1 onion, diced
- 14.5 oz. stewed tomatoes, undrained
- 12 oz. tomato paste
- 2 teaspoons sugar
- 2 teaspoons dried oregano
- 1 teaspoon garlic salt
- 1 cup mozzarella cheese, shredded
Instructions
- Cook spaghetti according to package instructions. Drain, and let cool slightly. Stir in butter, Parmesan cheese and eggs.
- Spoon into 2 9-in pie pans that have been sprayed with nonstick cooking spray. (half of the spaghetti in each of the pies). Press the spaghetti down to form a crust.
- Spoon cottage cheese over spaghetti noodles (1 cup per pie).
- Meanwhile, brown ground beef and chopped onions in a skillet. Season to taste with salt and black pepper; drain excess grease if needed.
- To the ground beef, add undrained tomatoes, tomato paste, sugar, oregano, and garlic salt. Stir until mixed well.

I have been making a “spaghetti pie” for decades. I was shown to layer it like lasagna – sauce with cooked hamburger or Italian sausage (jarred sauce works fine) ,then spaghetti, then cheese (shredded mozzarella, cheddar, parmesan, and a few plops of cottage or ricotta all mixed up)
all layered 3 times, topped with mozzarella in a 9X13 glass dish. Everybody loves it and wants to take some home !
