- 1 cup Heavy Cream
- 1 Tablespoon Butter
- 1 bunch Green Onions Scallions
- 2 pounds Fresh Beets
- Salt, to taste
- Black Pepper, to taste
To prepare beets, trim off beet greens leaving around 1 inch of stem intact. Lightly oil with cooking spray, and place uncovered on a sheet pan or baking sheet. Cook in a preheated 325 degrees F until tender up to 2 hours for a large beet.
Cool the beets, peel off the skin and dice into small pieces.
In a medium saucepan or skillet, simmer heavy cream over medium heat until reduced by half, around 5 to 7 minutes.
Melt butter in a separate skillet or saucepan over low heat. Cook the onions for approximately one minute, stirring occasionally.
Stir in the beets and the reduced cream with the cooked onions in a skillet.
Season well with salt and black pepper. Cook until heated through.
Serve hot.
