Egg salad is a favorite of ours during the 40 days of Lent, but it’s also something we like to throw together whenever we need a quick meal. How to Make Old Fashioned Egg Salad Sandwich without Mayo:

This easy egg salad is a simple recipe, and once you have the eggs hard boiled it comes together in a flash.

Hard boil 3 eggs (or more if you have more mouths to feed). Chop the eggs, and combine them with relish, mustard and 1/4 cup cream of chicken soup. Chill to let the flavors incorporate. Sprinkle with black pepper, if desired.

Ingredients

  • 1/4 cup cream of chicken soup
  • 3 hard boiled eggs
  • 2 Tablespoons sweet pickle relish
  • 1/2 teaspoon prepared yellow mustard

Instructions

  • Chop hard boiled eggs. Combine with cream of chicken soup, relish and mustard. Sprinkle with black pepper, if desired. 
  • Chill in the refrigerator for at least 1 hour.
  • Serve with crackers, on regular sandwhich bread or on fancy rye bread.
