Egg salad is a favorite of ours during the 40 days of Lent, but it’s also something we like to throw together whenever we need a quick meal. This egg salad recipe with relish came from Carefree Country Cooking, a collection of family recipes from the St. Patrick Alter Society in Imogene, Iowa. Let me tell you, those ladies knew how to cook.
We love how this is an egg salad recipe without mayo which is very unique. We bet you are wondering what can you substitute for mayonnaise in egg salad? The surprise ingredient is cream of chicken soup which gives it a creamy texture without overpowering the eggs.
This particular recipe serves 2-3 people, but it is easily doubled, tripled or more for bigger families.

This easy egg salad is a simple recipe, and once you have the eggs hard boiled it comes together in a flash.
Hard boil 3 eggs (or more if you have more mouths to feed). Chop the eggs, and combine them with relish, mustard and 1/4 cup cream of chicken soup. Chill to let the flavors incorporate. Sprinkle with black pepper, if desired.

4 Ingredient Egg Salad Without Mayo
- 1/4 cup cream of chicken soup
- 3 hard boiled eggs
- 2 Tablespoons sweet pickle relish
- 1/2 teaspoon prepared yellow mustard
- Chop hard boiled eggs. Combine with cream of chicken soup, relish and mustard. Sprinkle with black pepper, if desired.
- Chill in the refrigerator for at least 1 hour.
- Serve with crackers, on regular sandwhich bread or on fancy rye bread.
