Classic Egg Salad Recipe

I love eggs, no matter how they are cooked. I honestly could eat some type of egg dish every single day without complaint. This includes classic egg salad. You know what I’m talking about, right?  Hard boiled eggs in a mayonnaise based dressing served up on a piece of bread or with crackers.

It may be old fashioned, but that doesn’t mean it isn’t tasty. My favorite egg salad recipe came from an old cookbook called The Frugal Gourmet Whole Family Cook Book. Their version is old fashioned, just the way I like it.

The best egg salad, in my opinion, is creamy and flavorful. It’s also simple but filling. Served on a slice of bread or toast, it takes you back to your childhood sitting in Grandma’s kitchen.

Will an egg salad sandwich get soggy overnight?

Yes, egg salad is a moist salad mixture. If you put the egg mixture on the bread, and store in the refrigerator overnight, you will have a soggy mess. Instead, store the egg salad and the bread separately, then assemble right before serving.
