I love eggs, no matter how they are cooked. I honestly could eat some type of egg dish every single day without complaint.

My favorite egg salad recipe came from an old cookbook called The Frugal Gourmet Whole Family Cook Book. Their version is old fashioned, just the way I like it.

The ingredients are simple when making egg salad sandwiches, which means I always have everything on hand to make them; no special ingredients taking up space in the cabinet.

The second thing I love about classic cold salad recipe is that it’s very economical. For just a couple dollars, you’ll have lunch on the table.

Thirdly, this easy egg salad recipe is quick to make, especially if you either cook your eggs ahead of time and store in the refrigerator, or if you tend to store hard boiled eggs ready to go in the fridge.

How to Make Easy Egg Salad Sandwich

  1. Hard boil eggs using your favorite method.
  2. Peel hard boiled eggs, and roughly chop.
  3. Mix chopped eggs, mayonnaise, minced onion and fresh chives (optional).  Taste, and season with salt and black pepper.
  4. Eat as an easy egg salad sandwich or with crackers.
