  1. Made this for dinner today. I made a few changes/additions. I used canned diced potatoes (drained) and added some chopped cabbage. I also added 2 tsp of minced garlic and 2 tsp of hamburger seasoning when browning the hamburger. I added a little honey just to tone down the tomato taste. It was delicious with cornbread crumbled in the top.

    1. Brenda – There are actually 46 oz bottles of V8 too – we have one in our kitchen right now! But you can definitely use the bigger bottle if you have it and want to make a bigger pot of soup!

  3. Nix the potatoes. My gramma made this, but with cabbage. And her own veggies, except carrots. She didn’t grow them. They are in it though. Potatoes for me, no. She also added okra. My dad picked it out. What did he know, lol. I love this soup. I have very few things I can eat for days. This is one of them. My gramma didn’t use V8 but I love the flavor it brings.

  4. I have to say, I was leary of how this would come out, but I wanted to try it to use up the V8 my mom keeps giving me, though none of us drink it.
    I substituted ground beef for turkey, and frozen mixed veggies for 2 drained cans. I also added a can of garbanzo beans, corn, and green beans. Last, I diced 2 small zucchini that REALLY needed to be used up.
    It came out just a little bland, so I added about 3 teaspoons of chicken bullion and let it summer another 30 minutes. OMGoodness, this is AMAZING! Thank you for sharing your recipe.

  5. I made a big pot. I couldn’t find v8 at my store so I used tomato juice. I also used a large onion, 2 pounds of hamburger meat, minced garlic, some Worcestershire sauce and a 24 oz bag of the mixed vegetables. It turned out great so I will definitely be making again.
