I am already prepping for the holidays.  For me, this means eating a low carb diet.  I like to be down a few pounds before the gluttony of the holidays begins. Low carb recipes do not need to hard. Often times, I already have the freezer and pantry stocked with low carb alternatives.

This Low Carb Kale Soup with Sausage will curb any carb craving.  Say that ten times fast!

The base of this soup mimics our Keto Tuscan Soup; the difference is the addition of kale. I usually buy it prepackaged where it’s already washed and chopped.  You can buy it whole.  Wash it and remove the tough spine. You are in control of the kale in this soup. Add a little, or add a lot.  You can cook it a little to keep the bite or cook it down until it’s completely wilted.  Both ways are acceptable.

Keto Zuppa Toscana Soup

Here’s the low down on this Keto Zuppa Toscana Soup.  The base of the soup is made with heavy whipping cream and chicken broth (go the low sodium route).  A majority of the flavor comes from pork sausage.  I recommend reserving some of the cooking grease to flavor the soup at the end.  It makes a huge difference.

When you get Olive Garden Zuppa Toscana Soup, it has potatoes; this low carb zuppa toscana uses riced cauliflower.  It has the same texture without adding much flavor.  Buy it in the freezer section, and cook it according to package directions, which usually entails cooking in the microwave.

How to Make Low Carb Tuscan Kale Soup:

Instructions:

  1. Cook the pork sausage. Once cooked, drain (if desired) and set sausage aside.
  2. Cook riced cauliflower according to package directions.
  3. Melt butter in a saucepan. Add garlic, onions (optional), and kale and cook until onions are translucent and kale is wilted down to your desired consistency.
  4. Pour in the chicken broth and heavy whipping cream stirring occasionally until the soup comes to a boil.
  5. Add the cooked and drained pork sausage, cooked riced cauliflower, salt and pepper. Heat through, and enjoy!

Ingredients

  • 1 pound pork sausage
  • 1/4 cup butter
  • 1/2 cup onions, diced (optional)
  • 4 cloves garlic, minced
  • 1-2 cups kale, destemmed and chopped into small pieces
  • 16 ounces heavy whipping cream
  • 2 cups chicken broth (low sodium)
  • 12 ounces riced cauliflower, cooked
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  • Cook pork sausage, breaking up into small chunks. Drain off excess grease if desired. You may want to add back some grease for flavor later in the cooking process.
  • Melt butter in a large saucepan; add onions, minced garlic and kale and saute until onions are soft and kale is wilted down to your desired texture.
