Weight Watcher Soup Recipe
Lately, we’ve been on a health kick. We are always looking for diet-friendly, Weight Watcher recipes, and we are big fans of the new Freestyle program. This version of chili checks the box for Freestyle, Zero-points because it uses ground turkey instead of ground beef. Just be sure to get the 99% fat free version (or try it with ground chicken).
We are also huge soup fans at These Old Cookbooks, including all types of chili (try our Crock Pot Chicken Chili).
Soup tends to come together quickly after a busy day at work for a fast meal. Another thing we love is that soup recipes are very forgiving. If you don’t have every single ingredient, it is quite simple to swap something you do have. Or, you can use up all those odds and ends in the refrigerator by adding it to whatever soup is simmering on the stove.
Kid-Friendly Soup Recipe
The best thing about Green Bean Chili is that my three young children absolutely love it. My kids love canned green beans and ground meat, and all three eat their entire bowl with no complaints.
Canned green beans are an easy substitution for kidney or chili beans when making chili so this recipe is perfect for kids (or adults) who aren’t fans of those traditional chili ingredients.
Sometimes chili can be too spicy for children; in that case, start with less chili powder and add to your family’s tastes.
What can I substitute for kidney beans in chili?
Simply swap in a can of cut, green beans for kidney or chili beans for a whole new (kid-friendly) recipe.
What are some good things to add to chili?
The great thing about chili is that you can totally modify it to your preferences. Here’s some fun additions for your next batch of chili:
- Drained, canned corn (or Mexi-corn)
- Cumin
- Taco seasoning
- Vinegar or Lime Juice (right before serving to brighten up the flavor)
- Canned, diced tomatoes
- Beer
- Chocolate or cocoa powder
- Diced vegetables (carrots, peppers or zucchini)
- Cornmeal (to thicken)
- Jalapenos
- Coffee or instant expresso powder
- Peanut butter (it’s a thing, for real)
- Liquid smoke
- Sugar, honey or molasses
Notes about Weight Watcher Green Bean Chili Recipe:
- In order to qualify as a zero-point recipe with Weight Watchers, be sure to use ground turkey that is 99% fat free.
- The recipe calls for salt and black pepper in two spots. First, be sure to season up the ground turkey well as it cooks with the onions. Second, add additional salt and pepper when you add the rest of the ingredients to season the soup as a whole.
- This weight watchers soup recipe works best with cut green beans from a can; however, if all you have is the French-style green beans, you can use those as well.
- This weight watchers green bean soup recipe could really be a stew or a soup. If you prefer a thicker stew consistency, drain the green beans before adding to the saucepan. If you like a soupier consistency, do not drain the green beans. Also, you could add a couple cups of water to the mixture to thin it out.
- You can control the spice level of this recipe by adjusting the amount of chili powder. If you prefer just a little spice, start with 1 tablespoon or if you like it spicy, add 2 or more tablespoons.
- If you don’t have stewed tomatoes, you could use canned diced tomatoes instead.
- Feel free to swap 2 small cans of tomato sauce for the larger 15 ounce can that the recipe calls for.
