Winter is a perfect time to put on a big pot of soup for the entire family to enjoy. Soup can feed a crowd, it usually gets better as it sits in the refrigerator, and it can warm you up after a day spent outside in the cold.
Broccoli Cheese Soup with Sausage Recipe:
Broccoli Cheese Soup and Tuscan White Bean Soup are two of our favorite soups on These Old Cookbooks. I took inspiration from both of them for this Broccoli Cheese Soup with Sausage recipe.
This cheesy base made of cream of chicken soup and Velveeta is packed full of broccoli, shredded carrots, potatoes and ground pork sausage in every bite. Serve this with crackers or even a grilled cheese for the perfect fall meal.
I usually have a freezer full of ground pork sausage from a half of a hog that we buy from a friend once a year or so. Aside from the typical biscuits and gravy, I’m always on the lookout for recipes that use ground pork sausage. Some of the recipes that I’ve added to my arsenal are Loaded Breakfast Casserole, Low Carb Tuscan Soup, and Egg and Sausage Breakfast Casserole.
Now that I’ve been inspired, I may be adding ground pork sausage to all my soup recipes!

- Chicken Bouillon
- Onion
- Water
- Potatoes
- Frozen Broccoli
- Carrots
- Velveeta
- Cream of Chicken Soup
- Pork Sausage

How to Make Sausage Broccoli Soup:

- Simmer diced onions, chicken bouillon and water for 20 minutes.
- Add diced potatoes, frozen broccoli and shredded carrots, and simmer for an additional 30 minutes.
- Stir in cooked and drained ground pork, cream of chicken soup and Velveeta, and heat until melted.

Notes About Broccoli Cheese Soup with Sausage:
- This is a spin on classic broccoli cheese soup.
- Cook and drain ground pork sausage before adding to the soup so it isn’t too greasy.
- Omit carrots and add more broccoli if desired, up to 20 ounces.
- Swap fresh broccoli for frozen broccoli. We love using fresh broccoli dishes, including 4 Ingredient Broccoli Casserole.
- If the soup is too thick, add water at the end to thin out.
- Wondering how much chicken bouillon equals a cube? Use 1 teaspoon of the chicken bouillon powder for each cube of chicken bouillon.

Ingredients
- 4 cubes chicken bouillon
- 1 cup diced onion
- 4 cups water
- 2 1/2 cups diced potatoes
- 12 ounces frozen broccoli
- 1 cup shredded carrots
- 1 pound Velveeta
- 21 ounces cream of chicken soup
- 1 pound pork sausage, cooked and drained
Instructions
- Brown and drain pork sausage. Set aside.
- Simmer diced onions, chicken bouillon and water for 20 minutes.
- Add diced potatoes, frozen broccoli, and shredded carrots, and simmer for an additional 30 minutes.
