Broccoli Cornbread Bake is an easy broccoli cheddar casserole that uses Jiffy cornbread mix. The result is a cheesy broccoli cornbread that feeds a crowd so it is the perfect holiday side dish.

Broccoli Cornbread Bake Recipe:

Broccoli Cheese Cornbread, as it is called in my Major Hospital Cook Book, is going to be my go-to holiday contribution to side dishes.

This recipe makes a large 13 x 9-inch pan that feeds a crowd, is easy to make, and everyone loves it. Did I mention how easy it is to prepare? All you need is one large bowl to mix everything together in, and you don’t even have to thaw the frozen, chopped broccoli.

The shortcut ingredient is a box of Jiffy cornbread mix. All the other ingredients are just enhancing the cornbread base. The cheesiness in this actually comes from a double hit of cheese with both cottage cheese and shredded cheddar cheese.

How to Make Jiffy Broccoli Cornbread Casserole:

  1. Preheat oven to 375 degrees F.
  2. Spray a 13 x 9 inch baking dish with nonstick cooking spray.
  3. In a large bowl, mix melted butter, dry cornbread mix, eggs, chopped onion, shredded cheddar cheese, frozen chopped broccoli and cottage cheese.
  4. Spread into prepared dish.
  5. Bake for 30-40 minutes or until lightly brown around edges and a toothpick comes out clean from the center.

Notes About Broccoli Cornbread Bake:

  • Do not thaw the broccoli before adding to this broccoli cornbread with cheese.
  • Be sure to get frozen, chopped broccoli not broccoli florets.
  • The cheddar cheese gives this broccoli cornbread casserole a sharpness but if your family prefers a different cheese, go ahead and substitute.
  • You can use the toothpick test to check to see if the center is fully cooked. The toothpick should come out clean.
  • Don’t worry about the edges getting darker than the middle. This creates a great crunchy edge!
