I love my slow cooker. Once you’ve mastered the basics, the sky is the limit. Sometimes, a new recipe just comes to mind, and that’s exactly what happened with this Mexican Style Crock Pot Pork Chops recipe. I was actually laying in bed trying to fall asleep, and boom, I knew exactly what I was making for lunch the next day.
I must have had pork on the mind. That’s because, I had just picked up a whole hog at the butcher. Our good friends raise pigs, and we tend to fill the freezer every year thanks to their efforts.
I love pork chops, pork steak, pork roast, bacon, sausage…bring it on. But sometimes, I need to spice things up with a new recipe. And these Slow Cooker Green Chile Pork Chops have just enough “spice”.
The sauce is simple with only three ingredients – salsa verde, green enchilada sauce and cream of chicken soup. The salsa verde and green enchilada sauce have that Mexican flare while the cream of chicken soup thickens the sauce. Cook some rice on the side and pour the extra sauce over top!
How to Make Southwest Pork Chops in the Slow Cooker:
Instructions:
- In a small bowl, combine salsa verde, green enchilada sauce and cream of chicken soup.
- Line the crock pot with a slow cooker liner, if desired or spray the insert with nonstick cooking spray.
- Arrange one layer of pork chops, pour sauce over top, then do a second layer of chops topped with sauce, etc until you’ve added all your chops. End with sauce completely covering the pork chops.
- Cook on high for 1 and a half hours or low for 3 to 4 hours.
- Serve over rice, if desired.

Ingredients
- 6-8 pork chops
- 10 ounces green enchilada sauce
- 1/2 cup salsa verde
- 10.5 ounces cream of chicken soup
Instructions
- In a small bowl, mix salsa verde, green enchilada sauce and cream of chicken until smooth.
- Line crock pot insert with a liner or spray with nonstick cooking spray.
- Arrange pork chops in bottom of insert, pour sauce over top. Add another layer of chops and more sauce, continue until the all the chops are in the insert and be sure the top is completely covered with the green sauce.
- Cook on high for 1.5 hours or low for 3-4 hours.
- Serve over rice if desired.
