But sometimes, I want a smothered pork chop recipe without gravy or cream soup. That’s how this Mexican Style Smothered Pork Chop recipe came about. I went straight to my pantry for dinner inspiration.
Instead of smothering with gravy, I smothered them in enchilada sauce and shredded cheese. Using the slow cooker made it super easy.
It essentially is a dump and go crock pot recipe. You could even put this together ahead of time in a resealable plastic bag and freeze; then, when you’re ready to use it, thaw, dump it in the crock pot and go. I love a good freezer meal.

The trick to making pork chops in the crock pot is to cook them for a shorter time than most other foods that you make in the slow cooker.
Pork Chops dry out easily, which means they are not the food to put in before work and let cook all day long. It just doesn’t work.
Instead, consider putting pork chops in the slow cooker mid morning and then eating them for lunch.

This recipe couldn’t be simpler.
It only has 4 easy peasy ingredients.
Mix together a cheesy, enchilada sauce using two canned items – canned, red enchilada sauce and canned cheddar cheese soup.
Alternate layers of pork chops and the enchilada sauce, and bake in the slow cooker.
Right before serving, top with your favorite type of shredded cheese and cover until melted. To make it authentic, use a Mexican Melting Cheese for Quesadillas. I buy a large bag of Chihuahua brand from Costco.
For the perfect meal, serve with Authentic Spanish Rice and refried beans.

- Either line a crock pot insert with a liner or spray with nonstick cooking spray.
- Mix together in a small bowl enchilada sauce and cheddar cheese soup.
- Put a small about of soup in the bottom of the crock pot insert.
- Layer pork chops and enchilada sauce mixture so that each layer is cover.
- Cover and cook on low for 3 to 4 hours (or high for 1 1/2 hours).
- Remove cover and top with shredded cheese.
- Replace cover and cook for an additional 10 minutes or until cheese is melted.

Instructions
- Line slow cooker with liner or spray with nonstick cooking spray.
- In a small bowl, mix enchilada sauce and cheddar cheese soup until smooth.
