Oven baked pork chops are my go-to when it comes to this cut of pork. The trick is to cook them at a low temperature in some type of liquid to prevent the pork chops from drying out.
Another trick of the trade is to baste the pork while cooking. Basting means to pour liquids over the food to keep it moist during cooking. Since pork chops tend to be less fatty than other cuts of meat, basting is a very important step.
Some recipes call to cover the baking dish to help keep the moisture in so the pork chops don’t dry out. This recipe uses the basting method.

How to make Baked Italian Pork Chops Recipe:

- Season pork chops with garlic salt and black pepper.
- Brown in hot oil on both sides. Remove and place in a greased 13 x 9 inch baking dish.
- Combine canned, diced tomatoes with Italian seasonings, drained, canned mushrooms and white wine.
- Pour tomato mixture over browned pork chops in baking dish.
- Sprinkle dried oregano over top of pork and tomatoes.
- Bake, uncovered for 1 to 2 hours. (See notes for exact times), basting every 30 minutes with pan juices.
- Serve over rice, if desired.

An easy substitute for Italian style diced tomatoes is as follows:
Take a regular can of diced tomatoes, and stir in 1 teaspoon dried oregano, 1 teaspoon dried basil, and 2 teaspoons garlic powder.
What type of wine should I use when cooking?
For savory dinners, it is best to use dry or crisp wines. A sweet wine will only become sweeter during the cooking process which is not usually the direction a main course is headed.
When cooking beef, go for a dry red wine such as a Cabernet Sauvignon, Merlot or a Pinot Noir. For chicken and/ or pork, use a white wine such as a Sauvignon Blanc, Chardonnay or a Pinot Grigio.

- Pork chops come in different thicknesses. Add additional cooking time up to 2 hours for thicker chops.
- For 1/2 inch thickness, bake around 1 hour and 15 minutes.
- For 1 inch thick chops, bake for 1.5 to 2 hours at 325 degrees. F.
- Baste pork chops with pan sauces every 30 minutes during cooking.

Ingredients
- 4 - 6 pork chops (see notes for thickness recommendations)
- Garlic salt
- Black Pepper
- 3 Tablespoons vegetable oil
- 4 ounces canned mushrooms, drained
- 15 ounces Italian-style canned tomatoes
- 3/4 cup dry white wine (substitutions in notes below)
- 1 Tablespoon dried oregano
Instructions
- Preheat oven to 325 degrees F. Spray a 13 x 9 inch baking dish with nonstick cooking spray.
- Season both sides of pork chops generously with garlic salt and black pepper.
- Heat vegetable oil in a skillet over medium high heat; brown both sides of pork chops.
- Place browned pork chops in prepared baking dish.
- In a bowl, mix drained mushrooms (optional), canned tomatoes with the juices, and wine; pour over browned pork chops.
- Sprinkle dried oregano over top of pork chops.
