This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve!
The weeks are flying by with evenings plum-full of games, practices and homework. Having a meal plan for the week reduces the stress for everyone.
One of our favorite plans is to make a huge amount of some type of protein on the weekend, and then use the leftovers another night in a whole new way. Making a new recipe keeps our husbands and kids from complaining about leftovers.
This week, we are using the Instant Pot to quickly cook a ham in a cranberry glaze. Then, we will chop up the leftover ham and use it in a leftover ham and noodle casserole. Or, if casserole isn’t your cup of tea, try making Ham Salad Spread or Mom’s Cheesy Ham and Potato Bake instead.
Our side dishes have an old fashioned spin this week. You’ll find that you can buy a box of corn flakes to use as a crunchy topping in both Cheesy Zucchini Casserole and Leftover Ham and Noodle Casserole. This reduces waste since there’s nothing worse than a half eaten box of cereal that lingers in the cabinet. Feel free to swap out crushed butter crackers or regular bread crumbs instead of cornflakes if desired.
