What to Expect

This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve. All of these recipes have simple ingredients and are easy to follow.

We recommend serving breakfast for lunch, also known as brunch to most of us, over the weekend. Breakfast foods are easy and a fun change from the traditional Sunday meal.

Many of our dishes this week use produce that is in-season.  We love how delicious fresh vegetables are and how cheap! You’ll be seeing recipes using zucchini, rhubarb, strawberries, tomatoes, onions, peppers and cucumbers.

One of Grandma’s favorite strategies is making up a weekly meal plan consisting of pantry staples. We are betting that you have many of these ingredients already in your refrigerator or pantry! That is a money-saving plan!  Our favorite is whipping up 3 ingredient chicken salad featuring canned chicken. No one will complain with this yummy meal.

Weekly Meal Plan, Week 15

Saturday: Vintage Barbecue Burgers and Easy Pan Fried Zucchini

Easy Pan Fried Zucchini is a fast side dish to use up garden zucchini.  These zucchini coins are breaded lightly and pan fried until crispy, salty and delicious. Grate with fresh Parmesan, and serve!

It’s Saturday. Celebrate with a Green Hawaiian Cocktail from Leah at Farm Wife Drinks.

Sunday: Serve brunch with a variety of options such as Eggs in a Basket, Classic Zucchini Bread and Strawberry Rhubarb Jam served with toast.

Egg in a Basket is a simple, yet delicious breakfast dish that you can have on the table in less than 10 minutes. A variation of the classic British dish - toad in the hole - this one features just toast and a runny fried egg.

Monday: Tuna Melt Turnovers and Crock Pot Calico Beans

Thursday: French Onion Joes and Crock Pot Cheesy Corn

These French Onion Joes are an easy alternative to traditional sloppy joes without the tomatoes. With just four ingredients, this loose meat sandwich is quick dinner option.

Friday: 3 Ingredient Chicken Salad and Creamy Dill Pea Salad

This 3 Ingredient Chicken Salad is a great option for an easy workday lunch to fix as a sandwich or put on crackers.
