Here’s the deal.
I often have leftover ham. Leftover spiral ham, leftover honey ham, leftover country ham, or sometimes just a ton of individual ham steaks in the freezer that need used up.
My family can only eat so many ham sandwiches or fried up ham steak, so I tend to dice up the ham and use it in casseroles.
Casseroles using leftover ham are always a big hit at my house, especially our mom’s cheesy ham and potatoes.
Naturally, when I found this pineapple ham casserole recipe, I had to add it to my leftover ham recipe collection.
A Pineapple Casserole with Ham
Pineapple casserole is actually a very old fashioned recipe served for dessert. This particular recipe for old fashioned pineapple casserole came from a cookbook, What’s Cooking, Teach?, that my momma bought for me.
In the notes of the recipe, it stated that pineapple casserole could be served topped with whipped cream for dessert or served along side of ham for dinner.
I decided that I wanted to shuffle things up a bit, so I added chunks of diced ham directly to the pineapple casserole, making it a complete pineapple and ham casserole.

Leftover Ham and Pineapple Recipe
Here’s another great option for all the leftover ham. Most likely after serving a huge ham, you might be tired of eating it after about day two or three. Don’t let the ham go to waste; my grandma would be appalled at that thought.
Instead, prep ahead now, and later you will thank yourself. Go ahead and dice up the ham into cubes, and then freeze it for use later.
I have a handy kitchen tool called a vacuum-sealer that I put to use in these instances. The vacuum-sealer removes all the excess air and gives a nice and tight seal. Then, I place in my deep freeze so it’s ready to go for casseroles such as this pineapple ham casserole.

Butter or Margarine, softened
Sugar
Eggs
Crushed Pineapple, drained well
White Bread, cubed
Ham, cubed
How to Make Pineapple Casserole with Ham
- Cream softened butter and sugar; add eggs one at a time, and mix until smooth.
- Drain crushed pineapple well. Mix into creamed mixture.
- Gently stir in cubed white bread and diced ham.
- Pour into a greased 8 x 8 inch baking dish.
- Bake in preheated 400 degree F oven for 40-50 minute or until lightly golden brown and set.

Notes about Old Fashioned Pineapple Casserole with ham
- This is a great recipe to use up leftover ham. Cut up that spiral ham or country ham after the holidays, and use the leftovers in this pineapple casserole.
- Another option would be to make the pineapple casserole without diced ham, and then serve up ham on the side.
- Be sure to drain the crushed pineapple well. I prefer to use a strainer. Save the pineapple juice and make Amaretto Pina Coladas!
- If you don’t want to waste the crusts of the bread, leave them on. Wheat bread could be substituted for white too.
- This pineapple casserole is sweet. Feel free to reduce the amount of sugar, if desired.

Ingredients
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 4 eggs
- 20 ounces crushed pineapple
- 5 slices white bread, crusts removed and cubed
- 1 - 2 cups diced ham
Instructions
- Preheat oven to 400 degrees F. Spray an 8 x 8 inch baking dish with nonstick cooking spray.
- Cream softened butter and sugar.
- Beat in eggs.
- Stir in well-drained pineapple, cubed ham and cubed bread.
- Pour into prepared dish.
- Bake for 40-45 minutes or until lightly golden brown.
