My family can only eat so many ham sandwiches or fried up ham steak, so I tend to dice up the ham and use it in casseroles. Naturally, when I found this pineapple ham casserole recipe, I had to add it to my leftover ham recipe collection.

Pineapple casserole is actually a very old fashioned recipe served for dessert.  This particular recipe for old fashioned pineapple casserole came from a cookbook, What’s Cooking, Teach?, that my momma bought for me.

In the notes of the recipe, it stated that pineapple casserole could be served topped with whipped cream for dessert or served along side of ham for dinner. I decided that I wanted to shuffle things up a bit, so I added chunks of diced ham directly to the pineapple casserole, making it a complete pineapple and ham casserole.

Instead, prep ahead now, and later you will thank yourself. Go ahead and dice up the ham into cubes, and then freeze it for use later.

I have a handy kitchen tool called a vacuum-sealer that I put to use in these instances. The vacuum-sealer removes all the excess air and gives a nice and tight seal. Then, I place in my deep freeze so it’s ready to go for casseroles such as this pineapple ham casserole.

How to Make Pineapple Casserole with Ham

Step by Step Instructions

  1. In a large bowl, cream softened butter and sugar; add eggs one at a time, and mix until smooth.
  2. Drain crushed pineapple well. Mix into creamed mixture.
  3. Gently stir in cubed white bread and diced ham.
  4. Pour into a greased 8 x 8 inch baking dish.
  5. Bake in preheated 400 degree F oven for 40-50 minute or until lightly golden brown and set.
