I made this creamy bean dip for a Labor Day gathering with our amazing college friends, Justin and Maryann. This is the same Maryann who is famous (in my opinion) for her Tuscan Bean Soup and Sweet Cornbread recipes.
To make life easy, I threw together this pureed dip the night before we left. It kept great in the refrigerator all weekend. It made a great snack served with tortilla chips, and then we ate it again the next day with raw carrots, celery, peppers and cherry tomatoes.
