9 x 13 Crock Pot Breakfast Casserole Recipe:
I love my Casserole Crock Pot. It’s a 9×13 inch crockpot (3.5 quarts) that’s programmable just like the regular oval shaped slow cookers. This shape and style crock pot is perfect for all types of casseroles just like this Slow Cooker Breakfast Casserole.
Ever since I purchased my casserole crock pot, I’ve been looking for 9 x 13 Crock pot recipes. It’s fun to modify existing recipes to fit this sized slow cooker.
My sister hosted a brunch for my nephew’s birthday, and I seized the opportunity to create this Casserole Crock Pot Hash Brown Breakfast Casserole. It turned out to be a big hit with the entire family, kids and adults alike.
The casserole consists of layers of all my favorite breakfast ingredients – hash browns, breakfast sausage, bacon, cheese and eggs.
Substitute any of your favorite breakfast ingredients in this recipe! Try switching out the shredded cheese with something fancy like Gouda, or keep it classic with cheddar. Use sausage links instead of ground sausage or use up some leftover ham. The options are endless.
I might even try topping my loaded breakfast casserole with fresh tomatoes.

Notes About Overnight Crock Pot Breakfast Casserole (13 x 9 inch casserole crock pot recipe):
- I only used about 2/3 of a 30 ounce bag of frozen hash browns; save the rest for later. I love to add frozen hash browns to soups!
- For this slow cooker breakfast scramble, keep the hash browns frozen. Do not thaw first.
- Use any type or combination of breakfast meats. Sausage, bacon, ham, Canadian bacon, polish sausage, diced sausage links – choose your favorites.
- Use your favorite type of shredded cheese. I suggest cheddar, Colby jack or Monterrey jack.
- I used Hungarian Paprika, but the regular version works too.
- Substitute regular salt for seasoned salt, if desired.
