Got picky kids? I’ve got a new meal just for you. Hamburger Hot Dish with Rice is an easy casserole that my kids love, and yours will too. Featuring ground beef, rice, and kidney beans in a base of tomato sauce, you may already have all the ingredients on hand.
Hamburger Hot Dish with Rice Recipe:
My kids love any kind of ground beef recipes, which means I’m always on the hunt in my vintage cookbooks. So when I stumbled upon this ground beef casserole (AKA Chili Rice Hot Dish), I marked the page in my Minnesota Centennial Cook Book.
This ground beef and rice casserole reminds me of another of my kid’s favorite dishes, Savory Sausage and Rice Casserole. Let’s face it. Kids (my kids in particular) can be picky, but if it has rice and some type of ground meat, they love it.
When I make this hamburger rice casserole, all three of my kiddos eat more than one helping. My 3-year old says “more meat and beans, more meat and beans, more meat and beans please.“ Whoop, whoop!
In Minnesota, it’s common to make a hot dish which is the same thing as a casserole in Indiana. Hot Dish vs. Casserole? In my opinion, the two are synonymous. Both are a combination of some type of meat and starch cooked together in the oven.
How to Make Hamburger Rice Tomato Hot Dish:
Instructions:
- Cook rice in salted water until partially cooked; drain water.
- Brown ground beef, onions and celery; drain excess grease if needed. Season with salt, pepper, seasoned salt and chili powder. Turn off heat, and stir in drained kidney beans.
- In a 13 x 9 inch baking dish that has been sprayed with non-stick cooking spray, alternate layers of cooked rice and ground beef mixture.
- Pour tomato juice over entire casserole.
- Bake at 350 degrees F for one hour or until rice is completely cooked. Fluff with a fork before serving.

Notes About Hamburger Rice Hot Dish Recipe:
- On a budget? Reduce the ground beef to 1 pound instead of 1 1/2 pounds in this hamburger casserole.
- If your ground beef is greasy; drain the excess grease before seasoning.

Hamburger Hot Dish with Rice
Ingredients
- 1 cup raw rice (not instant)
- 1 1/2 pounds ground beef
- 1 onion, diced
- 1 cup celery, diced
- 1 teaspoon salt
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili powder
- 15 ounces red kidney bean, drained
- 1 quart tomato juice (4 cups)
Instructions
- Preheat oven to 350 degrees F; spray a 13 x 9 inch baking dish with nonstick cooking spray.
- Boil rice in salted water until partially cooked (approximately 5 minutes); drain and set aside.
- In a large skillet, brown ground beef with onions and celery; drain excess grease if needed.
- Season beef with salt, black pepper, seasoned salt and chili powder. Add drained beans to the mixture and stir.
- Alternate rice and meat mixture in the prepared baking dish. Pour tomato juice over the casserole.
- Bake uncovered for 1 hour or until rice is cooked and fluffy.
- Fluff casserole with a fork before serving.
