Ingredients in Potato Soup with Pork Sausage

There’s something that just draws me into a new soup recipe like this Breakfast Sausage Soup with Potatoes which I found in an old 1988 Homemakers Cook Book.

  • Celery, diced
  • Potatoes, cubed
  • Onions, diced
  • Butter or margarine
  • Flour
  • Milk
  • Nutmeg
  • Salt and Black Pepper

Can you use unpeeled potatoes in soup?

Yes, absolutely.  Use unpeeled recipes in any recipe that calls for potatoes, if desired.  Leaving the peel (skin) on a potato adds more natural fiber to a dish, and much of the potassium found in potatoes is in the skin.  Scrub the potato skin well to remove any dirt before dicing.

What can I substitute for oleo?

An easy substitution for oleo in vintage recipes would be butter, margarine or vegetable shortening.  Substitute on a 1:1 ratio.

Can you put raw sausage in soup?

You could, however, I do not recommend it. Sausage of any type tends to have a high fat content.  Browning the sausage first renders out the fat, allowing you do drain it off before adding the sausage to the soup.

Sausage Potato Soup

It’s me – the soup queen speaking. I make so many soups in the winter that my husband doesn’t ask “what’s for dinner”; instead, he asks “what type of soup is for dinner.”  It seems, I just can’t help it.  I love all soups because they are easy to make, they feed a crowd, you can’t mess them up, and there’s always leftover for later.

I’ve found that I can make a couple types of soup on the weekend, and then save them for later in the week when I’m exhausted from working and do not feel like making a huge meal for the family.  I pull out the soup, warm it up, and dinner is served.

Some of my favorite soups that can be made on the stove top in about 30 minutes are:

  2. this soup is amazing! a few changes, sautéed the onion in butter for a few minutes with some mixed garlic before adding the other veggies and used chicken Broth instead of water. at the end I added a few cups of chopped fresh spinach right before taking it off the heat. I served this to 2 adults and 5 teens who all loved it! it’s going on the recipe book for sure!

  3. Delicious! I forgot to add the milk to the flour and butter mixture, so I added it at the end. It was still so tasty! Along with the salt and pepper to taste, I added 1/2 t. of red pepper.
