Potato Sausage Casserole Recipe
How do you decide which new recipes to try? For me, it’s all about the ingredients. I am always looking for recipes that use the ingredients I already have in the freezer or pantry. For instance, I love trying new recipes with ground pork sausage.
When I stumbled upon this potato casserole with pork sausage in a cookbook from the Waynesburg Christian Church. It was icing on the cake when I just happened to have all the other ingredients too – potatoes, onions, shredded cheddar cheese, margarine (or butter), flour and milk. This casserole without cream of mushroom soup is just like what your Grandma would make for dinner.
Putting this casserole together is a breeze. You do have to boil the potatoes and brown the pork sausage before you assemble but both of those steps take just a few minutes each and can be done at the same time! Once those ingredients are cooked, this pork sausage casserole is assembled in 4 layers.

Potatoes, sliced thin
Ground Pork Sausage
Onions (optional)
Shredded Cheddar Cheese
Butter
Flour
Milk

- Boiled, sliced potatoes
- Thinly sliced onions (optional)
- Browned pork sausage
- Shredded cheddar cheese
- Easy white sauce (also called a béchamel sauce)
Pork Sausage Casserole – An Old Fashioned Sausage Casserole
I love making casseroles. You can add a little more of this or a little less of that depending on the number of mouths to feed or what you have on hand.
For this casserole, here’s some of the changes that you can make:
- Add more potatoes if you need to feed a few more people.
- Yukon Gold potatoes do not have to be peeled. Swap them for whatever type of potato you have on hand.
- If you have picky eaters, onions can be omitted.
- Spicy pork sausage would give great flavor.
- Try swapping pork sausage for seasoned ground beef.
- Use Colby Jack or Monterrey Jack or whatever type of shredded cheese you prefer.
You get the idea. The options are endless when making a casserole.
How to Make Pork Sausage Casserole
- Preheat oven to 375 degrees F. Spray a 13 x 9 inch baking dish with non-stick cooking spray.
- Scrub and slice potatoes thin; boil in salted water for 5 minutes. Reserve 1 cup of potato water; drain the rest.
- Brown pork sausage; drain excess grease.
- Melt butter in a small saucepan; add flour and blend until smooth. Slowly add reserved potato water and milk; whisking over medium heat until the sauce thickens.
- In the prepared baking dish, layer potatoes, onions, browned sausage, and cheese; pour the white sauce over the layers.
- Bake covered for 45 minutes.

Notes About Pork Sausage and Potato Casserole:
- Love spice? Try using hot pork sausage in this Potato Sausage Casserole.
- If you are using unseasoned pork sausage, you will want to add salt to the cream sauce.
- I did not peel my potatoes because I used Yukon gold potatoes which have a thin skin. Use whatever potatoes you have on hand and peel if desired before boiling.
- Onions are optional. Use as many or as little as your family likes. They do add great flavor to this old fashioned casserole without cream of mushroom soup.
- If you like a crusty cheese topping, remove the foil the last 10 to 15 minutes for a golden brown appearance (see photo below).
- Let the oven sausage casserole sit at room temperature for 10 minutes before serving so that it holds together.

Potato Sausage Casserole - Creamy Sausage Potato Bake
Ingredients
- 4 cups potatoes, cleaned and sliced thin
- 1 cup reserved potato water
- 1 pound ground pork sausage
- 1 cup thinly sliced onions (optional)
- 1 cup cheddar cheese, shredded
- 3 Tablespoons margarine or butter
- 1/4 cup flour
- 1 cup milk
Instructions
- Preheat oven to 375 degrees F. Spray a 13 x 9 inch baking dish with non-stick cooking spray.
- Boil the cleaned, sliced potatoes for 5 minutes in salted water. Reserve 1 cup of cooking water; drain the remaining water.
- Brown pork sausage loosely; drain excess grease.
- In a small saucepan; melt margarine. Add flour and stir until smooth.
- Slowly add 1 cup reserved potato water and milk; whisking over medium heat until smooth.
- In the casserole dish, layer all cooked, drained potatoes, add layer of onions on top.
- Top with drained sausage and shredded cheese.
- Pour white sauce over the entire casserole. Season with salt and pepper, if desired.
- Cover with foil, and bake for 45 minutes. Remove from oven, and let sit for 10 minutes before serving. (Optional: remove foil the last 10-15 minutes of baking for a crusty cheese topping.)

I stumbled upon this in looking for a recipe for sausages and it looks marvelous but with the ingredients there is no set cups or ounces or how much flour or milk could you please send me the ingredients with a cup or an ounce or whatever for the butter and the flour and cheese onions I’m sorry if this message doesn’t make any sense but I am confused and I would like to make this tonight for dinner but without the correct amount of ingredients I don’t know what to use thank you and have a great day
