Our Potato Sausage Casserole is the real deal. Potatoes, ground pork sausage, and shredded cheese are covered in a basic white sauce to form an easy casserole that is reminiscent of what Mom or Grandma would serve.
Potato Sausage Casserole Recipe:
How do you decide which new recipes to try? For me, it’s all about the ingredients. I am always looking for recipes to use the ingredients I already have in the freezer or pantry. For instance, I love trying new recipes with ground pork sausage.
When I stumbled upon this potato casserole with pork sausage in a cookbook from the Waynesburg Christian Church. It was icing on the cake when I just happened to have all the other ingredients too – potatoes, onions, shredded cheddar cheese, margarine (or butter), flour and milk. This casserole without cream of mushroom soup is just like what my Mom or Grandma would make for dinner.
Putting this casserole together is a breeze. You do have to boil the potatoes and brown the pork sausage before you assemble but both of those steps take just a few minutes each and can be done at the same time! Once those ingredients are cooked, this pork sausage casserole is assembled in 4 layers.
Pork Sausage Casserole Layers:
- Boiled, sliced potatoes
- Thinly sliced onions
- Browned pork sausage
- Shredded cheddar cheese
- Then they are all covered in a white sauce, so maybe that’s 5 layers…
I love making casseroles. You can add a little more of this or a little less of that depending on the number of mouths to feed or what you have on hand.
For this casserole, here’s some of the changes that you can make:
- Add more potatoes if you need to feed a few more people.
- Yukon Gold potatoes do not have to be peeled. Swap them for whatever type of potato you have on hand.
- If you have picky eaters, onions can be omitted.
- Spicy pork sausage would give great flavor.
- Try swapping pork sausage for seasoned ground beef.
- Use Colby Jack or Monterrey Jack or whatever type of shredded cheese you prefer.
You get the idea. The options are endless when making a casserole.
How to Make Pork Sausage Casserole:
Instructions:
- Preheat oven to 375 degrees F. Spray a 13 x 9 inch baking dish with non-stick cooking spray.
- Scrub and slice potatoes thin; boil in salted water for 5 minutes. Reserve 1 cup of potato water; drain the rest.
- Brown pork sausage; drain excess grease.
- Melt margarine in a small saucepan; add flour and blend until smooth. Slowly add reserved potato water and milk; whisking over medium heat until the sauce thickens.
- In the prepared baking dish, layer potatoes, onions, browned sausage, and cheese; pour the white sauce over the layers.
- Bake uncovered for 45 minutes.

Notes About Pork Sausage and Potato Casserole:
- Love spice? Try using hot pork sausage in this Potato Sausage Casserole.
- If you are using unseasoned pork sausage, you will want to add salt to the cream sauce.
- I did not peel my potatoes because I used Yukon gold potatoes which have a thin skin. Use whatever potatoes you have on hand and peel if desired before boiling.
- Onions are optional. Use as many or as little. They do add great flavor to this old fashioned casserole without cream of mushroom soup.
- I like my casseroles golden brown on top. If you prefer less browning, cook this pork sausage casserole at 350 degrees F for 1 hour.
- Let the oven sausage casserole sit at room temperature for 10 minutes before serving so that it holds together.

- 1 pound ground pork sausage
- 1 cup thinly sliced onions (optional)
- 1 cup cheddar cheese, shredded
- 3 Tablespoons margarine or butter
- 1/4 cup flour
- 1 cup milk

- Brown pork sausage loosely; drain excess grease.

- Slowly add 1 cup reserved potato water and milk; whisking over medium heat until smooth.
- In the casserole dish, layer all potatoes, onions, sausage and cheese. (First layer potatoes, second layer onions, etc.)
- Pour white sauce over the entire casserole.
- Bake for 45 minutes and remove from oven. Let sit for 10 minutes before serving.
