Casserole cooking is one of the easiest and most economical ways to feed a large family. Plus, there’s just something homey about a warm, cheesy, creamy casserole. That’s why I’m always looking for new casserole ideas, particularly with ground beef.
Ground beef casseroles always get eaten in my house as my kids are big fans of pretty much any meal with hamburger. Happy kids equals happy Momma.
Ground Beef and Egg Noodle Casserole
The day I whipped up this easy hamburger egg noodle casserole, my 5-year-old nephew happened to be over. He “happens” to be over all the time since all the cousins live next door to each other, all 10 of them. It’s a great way of life, just saying.
Anyways, my nephew tore into this creamy ground beef casserole, and then asked for more. Score one for Aunt Barbara.
Creamy Hamburger Noodle Casserole
What’s the secret to a creamy hamburger noodle casserole, or actually any type of creamy casserole?
After you later your ingredients such as egg noodles, hamburger, cheese, etc. in the baking dish, beat 2 eggs with 1/4 cup milk and pour it over the top. This creates a creamy, custard layer that binds everything together.

Ingredient List for Easy Hamburger Noodle Casserole
Ground Beef
Vegetable Oil (optional)
Onions
Butter
Salt
Black Pepper
Dried Thyme (or fresh)
Egg Noodles, cooked
Cream of Mushroom Soup
Cheddar Cheese, shredded
Milk
Eggs
How to Make Hamburger and Noodle Casserole
- Heat butter in a large skillet, and cook diced onions until softened. Remove to a bowl.
- Add vegetable oil (optional) and brown hamburger leaving it in larger chunks. Season with salt, black pepper, dried thyme, and cooked onions.
- Spray a 13 x 9 inch baking dish with nonstick cooking spray.
- Layer half of the cooked egg noodles, followed by half the cooked ground beef and half of the can of cream of mushroom soup. Repeat the layers.
- Beat eggs with milk, and pour over top the entire casserole.
- Top with shredded cheese.
- Bake for 20-30 minutes or until golden brown.

Notes About Ground Beef and Egg Noodle Casserole
- If desired, omit onions, or add dried minced onions or onion powder to the ground beef while it’s browning.
- Par cook the egg noodles a couple minutes under package instructions so that they don’t get mushy while cooking in the oven.
- Leave the ground beef in larger chunks while browning.
- Cream of celery, cream of onion or cream of bacon could be subbed in for cream of mushroom soup, if desired.
- Substitute in your favorite type of cheese for cheddar, if desired.

What goes with hamburger noodle casserole?
Are you trying to figure out what should you serve with hamburger casserole?
I recommend serving up a simple side salad or green vegetable such as creamed peas, steamed asparagus or cucumber salad.
If your family doesn’t dig green vegetables, then go with a simple side such as applesauce, fruit salad or deviled eggs.

Ground Beef and Egg Noodle Casserole - Easy Hamburger Noodle Casserole
Ingredients
- 2 cups egg noodles, cooked (see notes) par cooked
- 1 Tablespoon butter
- 1 onion, diced
- 1 Tablespoon vegetable oil (optional)
- 1 pound ground beef
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 10.75 ounces cream of mushroom soup
- 2 eggs
- 1/4 cup milk
- 3/4 cup cheddar cheese, shredded
Instructions
- Preheat oven to 350 degrees F. Spray a 13 x 9 inch baking dish with nonstick cooking spray.
- Add butter to large skillet, and cook diced onions until soft. Remove from pan and set aside.
- If needed, add vegetable oil to same skillet. Brown ground beef, leaving in larger chunks. Season with salt, pepper, dried thyme and cooked onions.
- In prepared casserole dish, layer 1/2 precooked egg noodles, 1/2 hamburger mixture and 1/2 can of mushroom soup. Repeat layers.
- In a small bowl, beat eggs and milk together.
- Pour egg mixture over casserole layers.
- Sprinkle top with shredded cheese.
- Bake for 20 to 30 minutes or until golden brown.
- Let sit for 5 to 10 minutes before serving.
Notes
