Casserole cooking is one of the easiest and most economical ways to feed a large family. Plus, there’s just something homey about a warm, cheesy, creamy casserole. That’s why I’m always looking for new casserole ideas, particularly with ground beef.

Ground Beef and Egg Noodle Casserole

The day I whipped up this easy hamburger egg noodle casserole, my 5-year-old nephew happened to be over. He “happens” to be over all the time since all the cousins live next door to each other, all 10 of them. It’s a great way of life, just saying.

Anyways, my nephew tore into this creamy ground beef casserole, and then asked for more. Score one for Aunt Barbara. Mom’s love this ground beef noodle casserole too because it’s such an easy dinner.

Creamy Hamburger Noodle Casserole

What’s the secret to a creamy hamburger noodle casserole, or actually any type of creamy casserole?

After you later your ingredients such as egg noodles, hamburger, cheese, etc. in the baking dish, beat 2 eggs with 1/4 cup milk and pour it over the top. This creates a creamy, custard layer that binds everything together.

How to Make Hamburger and Noodle Casserole

Step By Step Instructions

  1. Heat butter in a large skillet, and cook diced onions until softened. Remove to a bowl.
  2. Add vegetable oil (optional) and brown hamburger leaving it in larger chunks. Season with salt, black pepper, dried thyme, and cooked onions. Drain excess grease if needed.
  3. Spray a 13 x 9 inch baking dish with nonstick cooking spray.
  4. Layer half of the cooked egg noodles, followed by half the cooked ground beef mixture and half of the can of cream of mushroom soup. Repeat the layers.
  5. Beat eggs with milk, and pour over top the entire casserole.
  6. Top with shredded cheese.
  7. Bake for 20-30 minutes or until golden brown.

Storage Instructions

Let leftovers cool. Transfer to an airtight container, and store in the refrigerator for up to a week. Rewarm leftovers in the microwave.

  • If desired, omit onions, or add dried minced onions or onion powder to the ground beef while it’s browning.
  • Par cook the egg noodles a couple minutes under package instructions so that they don’t get mushy while cooking in the oven.
