What to Expect

This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve!

The weather officially has turned which means that we not only need coats but we are craving warm, homey, hearty meals such as casseroles. Grandma was the queen of casseroles.  This week, you will find a variety including chicken noodle casserole with potato chips on top for a crunchy topping Reuben casserole which has all the tasty flavors of a traditional Reuben sandwich.

Making casseroles means that you will most likely have leftovers.  Do you have one night of the week designated to leftovers?   That’s a good strategy to make sure food does not go to waste.  Grandma would never have let that happen.

Our meal plan for the week also includes a couple new spins on old classic recipes.  We’ve taken the traditional tater tot casserole and improved the flavor by making it a Frisco version. Frisco Melts are those delicious hamburgers found at Steak N Shake that have a sweet cheesy sauce.  Another update is our Low Carb Kale Soup.  This Tuscan Soup is so tasty that your family will be none the wiser that it is low carb.  And, the flavors get better as it sits in the refrigerator.

The crumbled cornbread serves as the binder while adding a bit of sweet flavor in this Crock Pot Enchilada Meatloaf.
