Have I ever mentioned that Megan and I grew up on a hog farm? Yep, our Dad raised pigs for most of his life which means we ate a lot of pork. To this day, I prefer pork over beef. And in all honesty, my kids do too.
Every year, I split a half of a hog with one of my sisters. We get it butchered, and then we fill our deep freezers with ham steaks, bacon, pork sausage, pork steaks, pork chops and pork roasts.
This is the reason I’m always on the lookout for a new pork recipe such as this honey mustard pork loin roast. I found a similar recipe for Honey Mustard Pork Tenderloin (oven version) in my North Carolina Elks Cook Book and modified it to fit my needs.
The result is a perfectly tender crock pot pork roast with a tasty and satisfying honey mustard glaze. You don’t necessarily have to go the extra step to make this honey mustard gravy, but I highly recommend it. It takes this recipe to a whole new level.
What cut of meat is a pork roast?
A pork roast is typically a pork loin roast. Sometimes, it comes with a bone still intact, but most often it is boneless. Pork Loin Roast is another name for Pork Roast.
This is not to be confused with a Pork Shoulder (also known as a Pork Butt). These are two entirely different cuts of meat.
What’s the best cooking method for pork roast?
In my humble opinion, the slow cooker works best for a pork roast. Since this cut of meat is from the loin of a pig, there isn’t a ton of fat. Low and slow results in a tender dinner. Do not overcook or it can get dry.
Can I substitute a pork roast for a beef roast in recipes?
Yes, you absolutely can. This is a great way to introduce some variety in your favorite recipes.
How to Make Honey Mustard Pork Shoulder Roast in Crock Pot:
Instructions:
- Line crock pot insert with a liner, if desired.
- Arrange pork roast in the crock pot insert.
- In a small bowl, whisk together honey, apple cider vinegar, brown sugar, Dijon mustard and paprika.
- Pour half of the mixture over roast, flip the roast and pour the remaining over the other side.
- Cook on high for 3 1/2 to 4 hours or low for 7-8 hours. If possible, flip the roast half way through cooking
Optional Honey Mustard Gravy:
- In a small bowl, mix cold water and cornstarch.
- Remove pork from slow cooker; cover with foil to keep warm. Leave the cooking juices in the crock pot.
- Pour cornstarch mixture into cooking liquids, and stir.
- Cover and cook for 20-30 minutes on high or until a gravy forms.
- Add additional honey and Dijon to taste. Season with salt and pepper. Serve over the meat or return the meat to the slow cooker to coat all sides.

- The Honey Mustard Gravy is completely optional, but highly recommended. If you’re short on time, omit the gravy steps. Instead, shred the pork and pour the cooking liquids over top before serving.
- I recommend using Dijon mustard, but in a bind stone-ground or yellow mustard works too.
- Do not overcook your honey mustard glazed pork roast. There’s nothing worse than tough pork.

Ingredients
Honey Mustard Glazed Pork Roast
- 4-5 pound pork roast
- 4 Tablespoons honey
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons brown sugar
- 1 Tablespoon Dijon mustard
- 1/2 teaspoon paprika
Honey Mustard Gravy
- 4 Tablespoons cornstarch
- 1/4 cup water
- 1 Tablespoon honey
- 1 Tablespoon Dijon mustard
- salt and pepper, to taste
Instructions
Honey Mustard Glazed Pork Roast
- Arrange pork roast in crock pot insert (use a liner if desired).
- In a small bowl, whisk honey, apple cider vinegar, brown sugar, Dijon and paprika.
- Pour half of the mixture over pork, flip and pour the remaining over the other half.
- Cover and cook on high for 3 1/2 to 4 hours or 7 to 8 hours on low or until it pulls apart with two forks. Serve with cooking juices or continue below with a honey mustard gravy.
Honey Mustard Gravy
- Remove pork from crock pot onto a plate; cover with foil to keep warm. Leave the juices in the slow cooker insert.
- In a bowl, whisk cornstarch and cold water.
- Pour into the cooking liquids and stir. Cover and cook on high for 20 to 30 minutes or until a gravy forms.
- To the gravy, add additional honey, Dijon, salt and pepper to taste. Pour over pork or return pork to the pan and stir to coat entirely.
