Apparently, moms have been making quick dinners like this Mexican Luncheon for a long time, and their families have been enjoying hearty homemade meals.
How to Make Mexican Goulash with Macaroni

- In a large skillet, brown ground pork sausage, diced onion and green pepper over medium-high heat.
- Once browned, add diced tomatoes, sour cream, sugar, chili powder and water to the beef mixture.
- Cover and simmer over low for approximately 20 minutes or until macaroni is cooked through, stirring occasionally.

- Use a taco seasoning packet instead of chili powder.
- Add a can of drained corn.

- 1 pound ground pork sausage (bulk)
- 1 cup onions, diced
- 1 green pepper, diced
- 2 cups tomatoes, diced (see notes for alternative to fresh)
- 1 cup sour cream
- 1 cup uncooked elbow macaroni
- 2 Tablespoons sugar
- 1/2 Tablespoon chili powder
- 1/2 cup water
Instructions
- In a large skillet, brown ground pork sausage, onions and diced peppers. (If extra grease, drain excess.)
- Add diced tomatoes, sour cream, uncooked macaroni, sugar, chili powder and water and stir.
- Simmer covered over low heat for 20 minutes or until macaroni is cooked through, stirring occasionally.
