This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve.
Do you ever make your meal the night before and then serve the next day? This is a great time-saving tip. This week, make your old-fashioned pancake batter the night before, and fry them up on Sunday morning. You can also make cucumber and onions over the weekend, and serve throughout the week.
Here’s another idea. Make up a big batch of hard boiled eggs so that you have a healthy mid-morning or afternoon snack at work. Be sure to do enough extras so you are all set for making Egg Salad (our version is without mayo).
Our meal plan uses some serious pantry and refrigerator staples this week. I almost always have canned biscuits in the fridge which is how our Easy Enchilada Biscuit Bake came to be. This same dish uses canned red enchilada sauce. Have you ever tried it? It’s one of my new favorite pantry staples. I can find it easily at the grocery store, including Aldi. Another great pantry staple is cream of chicken soup. This is the secret ingredient in our 4 Ingredient Egg Salad (don’t knock it until you try it).
