My kids love whoopie pies, especially these easy chocolate whoopie pies. The recipe makes 12 whoopie pies, and my kids can knock out an entire batch easily in one day.
I really don’t mind because they are truly so easy to make. The reason being is that they use a dry chocolate cake mix as the main ingredient. I prefer to fill them with homemade cream cheese frosting; however, to keep the easy theme, use a premade tub of vanilla icing as the filling. How to make chocolate whoopie pies?
Step by Step Instructions
- Preheat oven to 350 degrees F. Line a large baking sheet pan with parchment paper.
- In a large bowl, mix chocolate cake mix, vegetable oil and eggs together until smooth and thick using an electric hand mixer or stand mixer. Use a low speed, and scrape down the sides of the bowl with a silicone spatula.
- Drop batter by rounded spoonful onto prepared cookie sheet. A small cookie scoop works great. If desired, roll the dough in your hands to get an even, round cookie dough ball.
- Gently press down with your fingers so they spread out more during baking.
- Bake for approximately 10 minutes until you have cakey chocolate cookies.
- Remove from the oven. Let cool on the pan for a few minutes before removing to a wire rack to cool completely.
- Spread a dollop of homemade cream cheese icing or store-bought vanilla icing in between two chocolate cookies.
