This Easy Chipped Beef Gravy recipe (also known as SOS) is not one we grew up eating in our house. We were more of a sausage gravy family, maybe because we raised hogs and always had plenty of sausage on hand. Or it might have been that our mom could stretch a pound of sausage to feed our family of six by making sausage gravy.
However, Barbara’s husband requested she try and make chipped beef gravy early on in their relationship. To him, it is the total comfort meal. Like any good recipe, she has tweaked it over the years and this version is always a hit in her house. She often makes this particular SOS recipe using Buddig beef
If you aren’t familiar with this dish, imagine a creamy white sauce with bits of dried beef stirred in. The sauce has saltiness from the beef that goes great over some type of bread.
This is a fast and kid-friendly dish which is great for a weeknight when you have a dozen other activities and dinner is an afterthought. Why?
Because all of the ingredients are ones that you probably already have on hand, except for the dried beef. And it’s a pantry item, so next time you are at the store, grab a jar or two to have on hand.

Ingredients
- 4 Tablespoons butter
- 1 2.5 oz jar or package dried beef (see notes about using refrigerated dried beef)
- 1/4 cup flour
- 3 cups milk whole or 2% works best
- 1 Tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- In a large saucepan, melt butter over medium heat.
- Add dried beef that has been cut into chunks or broken into little pieces.
- Brown chipped beef in butter for 2 to 3 minutes; add flour.
- Stir flour and beef together; the beef should clump up. Cook, stirring constantly for 1 minute.
- Gradually add milk (about a cup at a time) while slowly stirring.
- Bring milk mixture to a slow boil until a thick gravy forms, approximately 8 to 10 minutes.
- Add salt, pepper, and Worcestershire sauce and stir to incorporate before serving.
- Serve it over lightly toasted bread that has been lightly buttered.

This is the first recipe that I could find that is authentic! The beef is seared in the butter FIRST! Great Job! But when available I buy my dried beef a the deli counter at our local market and ask them to Chip it. They’re not always pleased but then it’s more fresh and not packed in so much salt.

We love this dish…. before I cut up the beef, I rinse it with warm water to rinse off a lot of the salt and I eliminate the added salt. We serve it over egg noodles, rice, toast, mashed potatoes.. very versatile 😋
One of my favorite breakfast meals, but the meat is too salty for the rest of my family. So when I make it, I just do a single serving. Oh, I start things off by sautéing onions….and I skip the additional salt.

I grew up in Cambridge City and graduated from Lincoln HS. I know Rihm’s very well; best meat around. They also used to have a grocery store. I’ve always known how to make what my mother called dried beef gravy, but I just thought I would see if there was another way to make it. This recipe is exactly how my family makes it and we love it.
