What to Expect

This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve!

How do you approach meal planning for the week?  I tend to make a large meal on the weekends and then have enough leftovers to be either eaten as a second (or third) meal, or which can be taken and turned into a completely new meal.  My husband isn’t always the best at eating leftovers. However, if I turn the leftovers into something new, he is none the wiser.

This week, I am making a huge pan of Oven Pulled Pork which can be warmed up quickly for a lunch or supper on the go.  I also love to serve pulled pork over baked potatoes or baked sweet potatoes.  If you do not smother the meatin BBQ sauce, cut it up and use it in casseroles, or put the meat in an air tight freezer bag, toss in the freezer and pull out on a busy, busy, busy weeknight.

Saturday: Oven Pulled Pork and Cheesy Potatoes with Bacon

This is the easiest Oven Pulled Pork recipe ever!  The rub is made of only two ingredients---coarse salt and black pepper, and the outcome is a moist, fall off the bone pulled pork that can be eaten alone, or topped with barbecue sauce.
