What to Expect

This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve!

How do you approach meal planning for the week?  I tend to make a large meal on the weekends and then have enough leftovers to be either eaten as a second (or third) meal, or which can be taken and turned into a completely new meal.  My husband isn’t always the best at eating leftovers. However, if I turn the leftovers into something new, he is none the wiser.

This week, I am making a huge pan of Oven Pulled Pork which can be warmed up quickly for a lunch or supper on the go.  I also love to serve pulled pork over baked potatoes or baked sweet potatoes.  If you do not smother the meatin BBQ sauce, cut it up and use it in casseroles, or put the meat in an air tight freezer bag, toss in the freezer and pull out on a busy, busy, busy weeknight.

In the first link below, we provide a step-by-step plan for the easiest, most moist, most-flavorful pulled pork.  Our friend who is a caterer shared some of her secrets with us and her pulled pork is the best ever!

Weekly Meal Plan, Week 21

Saturday: Oven Pulled Pork and Cheesy Potatoes with Bacon

This is the easiest Oven Pulled Pork recipe ever!  The rub is made of only two ingredients---coarse salt and black pepper, and the outcome is a moist, fall off the bone pulled pork that can be eaten alone, or topped with barbecue sauce.

Celebrate the weekend with a Hard Blackberry Lemonade.

Hard Blackberry Lemonade is a 2-ingredient cocktail that will soon become your go-to summer drink.  Simply Lemonade is jazzed up with Blackberry Moonshine for the best-ever hard lemonade recipe.

Sunday: Serve up brunch and try Pumpkin Waffles (with a hint of cinnamon) and Cheesy Egg Casserole.

This simple pumpkin waffle batter can be made ahead and stored in the refrigerator overnight.

Going all out? Try Biscuits and Gravy from out friend at Farm Wife Feeds.

Monday: Crock Pot French Onion Pork Chops with Rice.

Crock Pot French Onion Pork Chops and Rice is a meal for the whole family. Let the pork chops cook all day and just add the rice when you are ready to eat.

Tuesday: Sheet Pan Fajitas (with steak, chicken or both).

The gentle spice of this Spicy Roasted Zucchini makes it a perfect side dish for any meal, especially when you need a dish using easy ingredients.
