How to Make Banana Bread

- Preheat oven. Spray 8×8 inch square glass baking dish with nonstick cooking spray.
- Beat egg whites until foamy and fluffy.
- In separate bowl, mix together dry ingredients.
- In a large mixing bowl, mix together honey, bananas, buttermilk and coconut oil.
- Add dry mixture until just incorporated.
- Fold in egg whites.
- Gently mix in chocolate chips and walnuts.
- Pour into prepared dish.
- Bake until toothpick comes out clean.

- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/4 cup flaxseed
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup honey
- 2 bananas ripe and lightly mashed
- 1/4 cup buttermilk
- 1/4 cup coconut oil
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350 degrees F; spray an 8 inch square glass pan with nonstick cooking spray.
- Beat egg whites until foamy and fluffy; set aside.
- Mix together all-purpose flour, whole wheat flour, flaxseed, baking powder, baking soda and salt; set aside.
- In a large mixing bowl, mix together honey, bananas, buttermilk, and coconut oil.
- Add dry mixture slowly until just incorporated.
- Fold in egg whites. Gently mix in chocolate chips and walnuts.
- Pour into prepared baking dish.
- Bake for 45 to 50 minutes or until toothpick comes out clean. You may want to cover with foil half way through baking to prevent over browning the top.
