How to Make Banana Bread

  1. Preheat oven. Spray 8×8 inch square glass baking dish with nonstick cooking spray.
  2. Beat egg whites until foamy and fluffy.
  3. In separate bowl, mix together dry ingredients.
  4. In a large mixing bowl, mix together honey, bananas, buttermilk and coconut oil.
  5. Add dry mixture until just incorporated.
  6. Fold in egg whites.
  7. Gently mix in chocolate chips and walnuts.
  8. Pour into prepared dish.
  9. Bake until toothpick comes out clean.

Ingredients

  • 4 egg whites
  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup flaxseed
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup honey
  • 2 bananas ripe and lightly mashed
  • 1/4 cup buttermilk
  • 1/4 cup coconut oil
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts

Instructions

  • Preheat oven to 350 degrees F; spray an 8 inch square glass pan with nonstick cooking spray.
  • Beat egg whites until foamy and fluffy; set aside.
  • Mix together all-purpose flour, whole wheat flour, flaxseed, baking powder, baking soda and salt; set aside.
  • In a large mixing bowl, mix together honey, bananas, buttermilk, and coconut oil.
  • Add dry mixture slowly until just incorporated.
  • Fold in egg whites. Gently mix in chocolate chips and walnuts.
  • Pour into prepared baking dish.
  • Bake for 45 to 50 minutes or until toothpick comes out clean. You may want to cover with foil half way through baking to prevent over browning the top.
